Perfect for when you have a picky appetite! I made Gimbap using Godel-ppegi kimchi, which is also a great side dish. The sweet, sour, and spicy flavor of the Godel-ppegi kimchi inside the Gimbap is truly top-notch! It’s a taste that will make you give a thumbs-up. Follow along right now!
Essential Ingredients- 1 Carrot
- Generous amount of Godel-ppegi Kimchi (store-bought or homemade)
- 4 Eggs
- 5 sheets of Gimbap seaweed (nori)
Cooking Instructions
Step 1
We’re going to make a special Gimbap using our star ingredient today: the sweet and spicy Godel-ppegi kimchi! First, prepare the carrots for the Gimbap. Wash the carrots thoroughly and julienne them thinly. Briefly blanch the carrots in boiling water with a pinch of salt to maintain their crisp texture. Be careful not to overcook them, or they will become mushy.
Step 2
Drain the blanched carrots well using a sieve. Then, place them in a dry pan (without oil) over medium-low heat. Stir-fry them briefly to remove any remaining moisture. This step enhances the natural sweetness of the carrots, making them even tastier for your Gimbap.
Step 3
Next, make the egg garnish, which adds richness to the Gimbap. Crack 4 eggs into a bowl, season lightly with salt, and remove the chalaza (the white, stringy bits). Lightly grease a heated pan with oil and pour the egg mixture over low heat. Cook until golden brown on both sides, creating a thin omelet.
Step 4
Once the egg omelet has cooled slightly, roll it up tightly and slice it into strips suitable for Gimbap. Slicing it this way will prevent the Gimbap fillings from falling apart and ensure a beautifully rolled Gimbap.
Step 5
Today’s Gimbap highlight is the Godel-ppegi kimchi! That’s why we’ve kept the other ingredients very simple. Let the cooked rice cool down to a manageable temperature, then mix it with salt, vinegar, and sugar to season. On the seasoned rice, generously place the stir-fried carrots, egg garnish, and our star ingredient, the Godel-ppegi kimchi. Using a bamboo mat, firmly roll the Gimbap, pressing as you go. The spicy and tangy Godel-ppegi kimchi will blend wonderfully with the rice, creating a fantastic flavor!
