Main Ingredients- 250g fresh gizzard shad sashimi
- 50g Korean water parsley (minari)
- 1/2 onion
- 5-6 perilla leaves (kkaennip)
Spicy & Tangy Gochujang Dressing- 10 Tbsp store-bought gochujang (Korean chili paste)
- 0.5 Tbsp minced garlic
- 1 Tbsp red chili powder (fine grind)
- 1/3 Tbsp wasabi (Japanese horseradish) (adjust to taste)
- 1 Tbsp sesame oil
- 1.5 Tbsp toasted sesame seeds (generous amount)
- 10 Tbsp store-bought gochujang (Korean chili paste)
- 0.5 Tbsp minced garlic
- 1 Tbsp red chili powder (fine grind)
- 1/3 Tbsp wasabi (Japanese horseradish) (adjust to taste)
- 1 Tbsp sesame oil
- 1.5 Tbsp toasted sesame seeds (generous amount)
Cooking Instructions
Step 1
First, prepare the fresh gizzard shad sashimi. If the pieces are too large, cut them into bite-sized pieces (about 3-4 cm). Wash the Korean water parsley and cut it into 5cm lengths. Thinly slice or julienne the onion. Thinly shred the perilla leaves by rolling them up. It’s important to maintain the crisp texture of the vegetables at this stage.
Step 2
In a bowl, combine the gochujang, minced garlic, red chili powder, wasabi, sesame oil, and toasted sesame seeds. Mix well with a spoon to create a delicious gochujang dressing. Wasabi can be quite potent, so start with a small amount and add more to taste. The toasted sesame seeds add a wonderful nutty flavor and texture.
