I received some fresh kelp strips as a gift after a holiday visit, and they’re incredibly affordable! Even when portioned and frozen, they retain their crisp texture, making them a fantastic side dish that can be enjoyed year-round. When you’re not feeling very hungry, a refreshing mix of sweet, sour, and spicy flavors will make this a real appetite-booster. Let’s make this simple yet delicious seasoned kelp dish right now!
Main Ingredients- Prepared kelp strips 300g
- 1/2 Onion
- 1/4 Bell pepper (for color, red or orange)
- 1/2 Korean chili pepper (optional, for extra spice)
Seasoning Ingredients- 3 Tbsp Fish sauce (anchovy or sand lance)
- 2 Tbsp Plum extract (maesilcheong)
- 1-2 Tbsp Red pepper flakes (adjust to taste)
- 1-2 Tbsp Minced garlic (adjust to taste)
- A pinch of sesame seeds (for garnish)
- 3 Tbsp Fish sauce (anchovy or sand lance)
- 2 Tbsp Plum extract (maesilcheong)
- 1-2 Tbsp Red pepper flakes (adjust to taste)
- 1-2 Tbsp Minced garlic (adjust to taste)
- A pinch of sesame seeds (for garnish)
Cooking Instructions
Step 1
Prepare the kelp strips. If using fresh kelp strips, rinse them lightly under running water, then soak them in cold water for about 5-10 minutes to soften them slightly. Be careful not to soak them for too long, as this can make them mushy.
Step 2
Drain the soaked kelp strips thoroughly using a sieve. Excess water can dilute the seasoning and shorten the shelf life of the dish.
Step 3
Thinly slice the onion. If using bell pepper and Korean chili pepper, remove the seeds and julienne them finely to add color and a bit of heat (if using chili pepper). The chili pepper will add a delightful spicy kick.
Step 4
In a large bowl, combine the drained kelp strips and the julienned vegetables (onion, bell pepper, and optional chili pepper).

Add all the seasoning ingredients to the bowl. Start with 3 tablespoons of fish sauce (anchovy or sand lance) for umami,

followed by 2 tablespoons of plum extract for a sweet and tangy balance.

Add 1-2 tablespoons of red pepper flakes, adjusting the amount to your preference for color and spiciness.

Also add 1-2 tablespoons of minced garlic for extra flavor. If you enjoy a strong garlic taste, feel free to add more.

Gently mix everything together with your hands until the seasoning is evenly distributed. Be careful not to overmix, as this can break down the kelp.
