Spicy & Tangy Bibim Guksu Sauce (Korean Cold Noodles)
Summer Delight! Simple Bibim Guksu Sauce Recipe in 5 Minutes
When the summer heat arrives, many of us crave refreshing noodle dishes. While Janchi Guksu (banquet noodles) is popular, Bibim Guksu (spicy mixed noodles) is often preferred for its simplicity and lack of hot broth. This dish is perfect for those days when you want a flavorful meal without spending too much time in the kitchen. The spicy, sweet, and tangy sauce will awaken your appetite! Let me share this easy Bibim Guksu sauce recipe with you.
Key Ingredients- 1 Tbsp Gochugaru (Korean chili flakes – use regular chili flakes if you prefer less heat)
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sugar
- 1 tsp Black Pepper (adjust to taste)
- 1.5 Tbsp Vinegar (increase to 2 Tbsp if you like it tangier)
- 1.5 Tbsp Soy Sauce (regular or seasoned)
- 0.5 Tbsp Sesame Oil (for nutty aroma)
- 1 tsp Sesame Seeds (toasted or crushed, optional)
Cooking Instructions
Step 1
First, prepare a mixing bowl to make the sauce. Add 1 tablespoon of Gochujang (Korean chili paste) to the bowl, which forms the base of our spicy flavor.
Step 2
Next, add 1 tablespoon of Cheongyang Gochugaru (spicy Korean chili flakes) for a delightful kick. If you prefer a milder taste or are cooking for children, you can substitute this with regular Gochugaru for a less intense heat.
Step 3
Add 1 tablespoon of sugar for sweetness and 1 teaspoon of black pepper to enhance the overall flavor. Feel free to adjust the amount of black pepper to your preference.
Step 4
Now, add 1.5 tablespoons of vinegar for that essential tanginess and 1.5 tablespoons of soy sauce for savory depth. If you enjoy a more pronounced sour note, you can increase the vinegar to 2 tablespoons.
Step 5
Finally, drizzle in half a tablespoon of sesame oil. Adding sesame oil towards the end helps preserve its fragrant aroma, making the sauce even more delightful.
Step 6
If you have sesame seeds, add about 1 teaspoon for extra nuttiness and texture. You can add them whole or lightly crushed. (If you’ve run out of sesame seeds, like the author did, you can simply skip this step and proceed to the next.)
Step 7
Using a spoon or a whisk, thoroughly mix all the sauce ingredients until well combined and no lumps remain. You’ll achieve a glossy and delicious Bibim Guksu sauce. Remember, you can adjust the quantities of each ingredient to suit your personal taste. I’ve made mine a little spicier and tangier to really boost the summer appetite. Enjoy your delicious Bibim Guksu with this homemade sauce!
