Ingredients- 1 handful of soybean sprouts (approx. 50g)
- 1/4 onion
- 2 Tbsp sugar
- 2 Tbsp vinegar
- 2 Cheongyang peppers (Korean red chilies)
- 2 Tbsp soy sauce
- 1 packet of ramen (noodles and soup base)
- 1 cup water (200ml)
- Ice cubes, as needed (optional)
Cooking Instructions
Step 1
First, prepare the Cheongyang peppers (2) to add a spicy kick and the onion (1/4) for a refreshing crunch. Finely chop the Cheongyang peppers, removing the seeds, and thinly slice the onion. Slicing them beforehand helps the flavors meld beautifully into the broth.
Step 2
Now, let’s make the signature broth for this chilled ramen! In a bowl, combine 2 Tbsp sugar, 2 Tbsp vinegar, and 2 Tbsp soy sauce. Whisk well. Add the chopped Cheongyang peppers and sliced onion, followed by 1 cup (200ml) of water for a cooling effect. Finally, stir in the ramen soup base from the packet. Taste and adjust the seasoning (sugar, vinegar, soy sauce) to your preference. If you like it extra cold, add plenty of ice cubes.

In a large pot, bring plenty of water to a boil. Add the handful of soybean sprouts and the sliced onion. Then, add the ramen noodles and cook according to the package instructions. Boiling the soybean sprouts with the noodles infuses the broth with a subtle, refreshing flavor and adds a nice crunch.
Step 4
Once the noodles are cooked, immediately drain them and rinse thoroughly under cold running water to cool them down. This step is crucial for achieving a perfectly chewy and springy noodle texture.
