I recently purchased some vibrant young ginseng! Even though they’re young, ginseng is still ginseng, and I figured they’d be great for boosting immunity, so I quickly bought them. Honestly, they were so affordable I didn’t have high expectations, but they turned out to be fresher and better than I imagined! So, I immediately made a salad with them. Since they’re young ginseng, the leaves are tender enough to eat, so I included them in the salad. I’m sharing them, so I don’t eat all of them at once, but as each day passes, they become even more delicious as they mature in flavor. When I ate them raw, just one was a bit difficult to manage, but when I eat them as a salad, I find myself eating more than ten in one meal! They’re truly delicious. I regret not buying more to preserve. The slightly bitter taste whets the appetite, and the healthy flavor of the tenderly chewed young ginseng is wonderful. Ingredients- 50 young ginseng roots
Seasoning- 1 Tbsp tuna extract
- 1 tsp gochujang (Korean chili paste)
- 2 Tbsp honey
- A little minced garlic

Cooking Instructions
Step 1
First, gently rinse the young ginseng under running water to thoroughly clean off any soil or debris. After washing, place them in a colander to drain completely. Removing excess water is key to allowing the seasoning to absorb properly and create a more delicious salad.
Step 2
Let’s prepare the delicious seasoning for our young ginseng salad! In a small bowl, combine 1 tablespoon of tuna extract, 1 teaspoon of gochujang, 2 tablespoons of honey, a little minced garlic, and 1 teaspoon of gochugaru. Mix these ingredients well until they are evenly blended. You can also add some finely chopped green onions for extra freshness, and a generous sprinkle of sesame seeds will add a delightful nutty flavor.
Step 3
Place the prepared young ginseng in a large bowl. Pour the prepared seasoning over the ginseng. Gently toss everything together using your hands or a spatula, ensuring the ginseng doesn’t break. It’s important to coat the leaves, stems, and roots evenly with the seasoning.
Step 4
The salad is delicious right away, but for an even deeper flavor, refrigerate it for about 3 days to let it mature. During this resting period, the initial slight bitterness of the young ginseng will mellow out, and the savory notes of the seasoning will meld beautifully, creating a richer taste experience. Store in an airtight container in the refrigerator.
