- 2 sheets Fish Cakes – Cut into bite-sized pieces.
- 3 cups Anchovy-Kelp Broth – The secret to a deep, savory flavor! Using broth instead of plain water elevates the taste.
- 1 cup Mozzarella Cheese – The signature melt-in-your-mouth cheese pull is essential!
- 1 handful Green Onion – Finely chopped for a fresh, aromatic finish.

Cooking Instructions
Step 1
First, gently rinse the tteokbokki rice cakes under cold water. Rinsing helps prevent them from sticking together. Cut the fish cakes into your preferred bite-sized shapes, such as triangles or rectangles. Finely chop the green onions to prepare for adding their fresh fragrance. Also, prepare 3 cups of anchovy-kelp broth, which is the key to the deep flavor. You can make this by simmering dried anchovies and kelp in water for about 10 minutes, then straining.
Step 2
Let’s make the delicious tteokbokki sauce! In a bowl, combine 3 tablespoons of gochujang, 2 tablespoons of curry powder, 2 tablespoons of gochugaru, 2 tablespoons of sugar, and 2 tablespoons of soy sauce. Mix thoroughly with a spoon or whisk until smooth and well combined. Properly mixing the sauce ensures even flavor distribution on the rice cakes, making them even more delicious.
Step 3
Now, pour the prepared 3 cups of anchovy-kelp broth into a pot. Stir in the mixed sauce until it’s well dissolved. Bring the mixture to a boil over high heat, then reduce to medium heat and let it simmer vigorously. As the sauce bubbles and cooks, it will release wonderful aromas.
Step 4
Once the broth starts boiling, add the rice cakes and fish cakes. Stir occasionally to prevent the rice cakes from sticking to the bottom of the pot. Cook over high heat until the fish cakes are coated in sauce and the rice cakes become soft and plump. As they cook, the sauce will thicken and reduce.
Step 5
When the rice cakes and fish cakes are almost cooked, add 0.3 teaspoons of black pepper to enhance the aroma. Simmer for another minute after adding the pepper to further develop the spicy flavor profile. Taste and adjust sweetness or saltiness by adding a little more sugar or soy sauce, if desired.
Step 6
It’s time to melt the cheese! Place 1 cup of mozzarella cheese in a microwave-safe bowl and microwave for about 30 seconds to 1 minute, or until completely melted. Adjust the time based on your microwave’s power. Alternatively, you can add the cheese directly to the pot towards the end of cooking the tteokbokki and cover with a lid to melt.
Step 7
And there you have it – your homemade Sinjeon-style Tteokbokki is ready! Serve the tteokbokki attractively in a bowl. Generously top it with the hot, melted mozzarella cheese.
