Main Ingredients for Pickled King Oyster Mushrooms- 1 pack King Oyster Mushrooms (approx. 300g)
- 6 Cheongyang Peppers (Korean chili peppers)
- 1/2 medium Onion

Step 1
First, wash the 1 pack of king oyster mushrooms thoroughly under running water. It’s important to meticulously remove any dirt or debris clinging to the surface.

Trim off the slightly dirty ends of the washed mushrooms. Then, slice them in half lengthwise and cut each half into long, bite-sized pieces, about 0.5-1 cm thick. Aim for pieces that are easy to eat.
Step 3
Sterilize the glass jar you’ll be using for pickling by immersing it in boiling water, then let it dry completely. Carefully arrange the prepared king oyster mushrooms inside the sterilized jar.

To add a pleasant spiciness, roughly chop the 6 Cheongyang peppers after removing their stems. Feel free to adjust the quantity based on your preference for heat.

Peel and wash the 1/2 onion, then slice it into thin strips (julienne). The sweetness and crisp texture of the onion will enhance the overall flavor.

Now, it’s time to prepare the sweet, tangy, and spicy pickling brine. First, pour 200ml of rice vinegar into a bowl.

Measure and add 100ml of soy sauce. Note that using regular soy sauce instead of a darker variety might result in a lighter color.

Add 50g of white sugar to contribute sweetness. You can adjust the sugar level according to your taste.
