Main Ingredients- 2 squid (about 15cm body length each)
- 1 medium onion
- 1/2 medium carrot
- 2 stalks of green onion
- 1 handful of chopped green onion (for garnish, optional)
- Cooking oil, as needed
Spicy & Sweet Sauce- 5 Tbsp soy sauce
- 3 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- Sesame oil, to taste
- Sesame seeds, to taste
- Black pepper, to taste
- 1/2 Tbsp minced Cheongyang chili pepper (optional, adjust spiciness)
- 5 Tbsp soy sauce
- 3 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- Sesame oil, to taste
- Sesame seeds, to taste
- Black pepper, to taste
- 1/2 Tbsp minced Cheongyang chili pepper (optional, adjust spiciness)
Cooking Instructions
Step 1
Clean the squid thoroughly, removing the innards and cartilage. Score the inside of the squid body in a diamond pattern. This helps the sauce penetrate better, making it more flavorful. (Make shallow cuts on the un-skinned side.)
Step 2
Wash and prepare all the vegetables. Slice the onion thinly, thinly slice or julienne the carrot, and cut the green onions diagonally.
Step 3
In a bowl, combine 5 Tbsp soy sauce, 3 Tbsp gochugaru, 1 Tbsp gochujang, 1 Tbsp sugar, 1 Tbsp minced garlic, and a pinch of black pepper. Mix well to create the sauce. If you prefer it spicier, add minced Cheongyang chili pepper to your liking.
Step 4
Heat a pan with a generous amount of cooking oil over medium-low heat. Add the diagonally sliced green onions and sauté gently until fragrant, creating infused green onion oil. (This adds a deeper flavor profile.)
Step 5
Once the green onions are fragrant, add the carrots first and stir-fry briefly until they are slightly tender.
Step 6
Add the prepared squid and stir-fry quickly over high heat. Cook just until the squid is opaque and chewy – avoid overcooking, as it can become tough.
Step 7
Add the prepared sauce to the pan and stir-fry with the squid and vegetables. To prevent the sauce from burning and to create a moist consistency, add 1-2 Tbsp of water. This creates a nice sauce that’s perfect for mixing with rice.
Step 8
Add the sliced onions and stir-fry until they become translucent. (Feel free to add other vegetables like cabbage or mushrooms if you like. I’ve used the basic ingredients: onion, carrot, and green onion.)
Step 9
Finally, turn off the heat and drizzle with sesame oil and sprinkle with sesame seeds to finish. Garnish with the chopped green onions for a visually appealing dish.
