First, thinly slice half an onion. Lightly oil a frying pan and sauté the sliced onion over medium-low heat until translucent. This process brings out the onion’s natural sweetness, which will greatly enhance the flavor of your kimchi stir-fry.

Cut the 300g of pork belly into bite-sized pieces (about 3-4 cm). Add the pork belly to the same pan used for the onions and cook over high heat until it’s browned and has rendered most of its fat, cooking it more than halfway through. Finely chop about 1/4 head of well-fermented kimchi (aged kimchi) into manageable pieces. Once the pork belly is partially cooked, add the chopped kimchi to the pan.
