Main Ingredients- 300g stew-grade pork (leave as is if you like fatty bits, trim if you prefer lean)
- 1/2 onion
- 4-5 cloves garlic (or 1.5 Tbsp minced garlic)
Marinade- 2 Tbsp soy sauce
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- Pinch of black pepper
- 1 Tbsp corn syrup (or oligodang)
- 1 Tbsp sugar
- A little sesame oil
- 2 Tbsp soy sauce

Cooking Instructions
Step 1
First, prepare the pork. The stew-grade pork usually doesn’t require much trimming. If you prefer less fatty meat, trim away some of the fat with a knife. To reduce any gamey smell, you can lightly pat the pork dry with paper towels.
Step 2
Let’s make the delicious marinade! In a large bowl, combine 1 Tbsp gochujang, 2 Tbsp gochugaru, 2 Tbsp soy sauce, 1 Tbsp corn syrup (or oligodang), and 1 Tbsp sugar. Add the minced garlic (about 3-4 cloves or 1.5 Tbsp) and a pinch of black pepper. Mix all the marinade ingredients thoroughly. Letting the marinade sit for about 30 minutes will allow the flavors to meld beautifully, creating a deeper taste. However, if you’re short on time, you can proceed to mix it with the pork right away. (Tip: Marinating the pork overnight in the refrigerator will result in an even more flavorful dish!)
Step 3
Prepare the vegetables for the stir-fry. This recipe uses only half an onion, but feel free to add other vegetables like green onions, carrots, or mushrooms according to your preference. (Tip: If you are marinating the pork overnight, it’s best to add watery vegetables like onions just before stir-frying. Adding them too early can cause the pork to steam rather than fry due to the moisture released by the vegetables.)
Step 4
Now it’s time to stir-fry everything. Place the marinated pork in a shallow pot or a wide frying pan and start cooking. Initially, cover with a lid and cook over medium-low heat to allow the pork to cook through gently. Once the pork is about halfway cooked, add the prepared onions and stir-fry them together. After ensuring the pork is fully cooked, taste it. If it needs more seasoning, add a pinch of coarse salt. If it’s too sweet, a pinch of coarse salt can also help balance the sweetness. Conversely, if it’s too salty, add a little sugar to adjust the flavor. Continue to stir-fry until all the ingredients are well combined and deliciously cooked.
