First, prepare the pork shoulder by slicing it thinly. Pork shoulder is recommended for its tender and chewy texture. Next, peel and wash the onion thoroughly. Slice it thinly into strips (about 0.5 cm thick). Finely chop the green onions. (Cooking Tip: For a golden ratio in your sauce, use twice the amount of green onions as garlic, and half the amount of ginger as garlic!)

Now, let’s make the delicious marinade for your Jeyuk Bokkeum. In a bowl, combine 1.5 Tbsp gochujang, 0.5 Tbsp gochugaru, 1 Tbsp soy sauce, 1 Tbsp plum extract, 1 Tbsp sugar, 1 tsp minced garlic, 2 tsp chopped green onions, 0.5 tsp ginger powder, and finally, 1 Tbsp sesame oil for that nutty aroma.
Step 3
Whisk or stir the marinade ingredients together with a spoon until smooth and well combined. Ensuring there are no lumps will help the marinade evenly coat the pork for maximum flavor. Now, add the sliced onion and thinly sliced pork shoulder to the marinade bowl. Gently mix everything together with your hands, ensuring the marinade coats every piece of meat.

Marinate the coated pork and onions in the refrigerator for at least 1 hour. The longer you marinate, the deeper the flavors will penetrate the meat, resulting in a more delicious dish. After marinating, heat a pan over high heat. Add the marinated pork mixture and stir-fry quickly. Keep stirring occasionally to prevent burning.
