Here’s a quick and easy recipe for spicy and sweet stir-fried pork (Jeyuk Bokkeum), made with lean pork shoulder. It’s a wonderfully flavorful and satisfying dish that’s perfect with rice. Even though it uses leaner cuts, it’s incredibly tender and packed with delicious flavor!
Main Ingredients- Pork Shoulder 300g
- Onion 1/4 (approx. 50g)
- Carrot 1/6 (approx. 30g)
- Green Onion (white part) 1 stalk
- Green Chili Pepper 1
- Enoki Mushrooms 1 bag (approx. 100g)
Spicy & Sweet Sauce- Gochujang (Korean chili paste) 1.5 Tbsp
- Soy Sauce 1/2 Tbsp
- Plum Extract (Maesilcheong) 1/2 Tbsp
- Cooking Wine (Mirin or Cheongju) 1/2 Tbsp
- Minced Garlic 1/3 Tbsp
- Ginger Juice 1/2 tsp (or finely minced ginger)
- Sugar 2/3 Tbsp (adjust to taste)
- Gochujang (Korean chili paste) 1.5 Tbsp
- Soy Sauce 1/2 Tbsp
- Plum Extract (Maesilcheong) 1/2 Tbsp
- Cooking Wine (Mirin or Cheongju) 1/2 Tbsp
- Minced Garlic 1/3 Tbsp
- Ginger Juice 1/2 tsp (or finely minced ginger)
- Sugar 2/3 Tbsp (adjust to taste)
Cooking Instructions
Step 1
Prepare the vegetables for cooking. Slice the onion into 0.5cm thick strips. Cut the green onion and green chili pepper diagonally. Slice the carrot thinly, either into rounds or strips. For the enoki mushrooms, trim off the base and gently rinse them under running water.
Step 2
Heat 1-2 tablespoons of cooking oil in a pan over medium-high heat. Add the pork shoulder and stir-fry until it’s no longer pink. Cooking the pork until all the redness is gone helps to reduce any gamey odors and keeps the juices locked in.
Step 3
Once the pork is about 80% cooked, add the sliced carrots and onions. Continue to stir-fry until the onions become translucent and the carrots are slightly tender. Be careful not to overcook, as the vegetables can become mushy.
Step 4
Now, let’s make the delicious sauce! In a small bowl, combine 1.5 Tbsp gochujang, 1/2 Tbsp soy sauce, 1/2 Tbsp plum extract, 1/2 Tbsp cooking wine, 1/3 Tbsp minced garlic, 1/2 tsp ginger juice, and 2/3 Tbsp sugar. Mix well. Feel free to adjust the sugar and soy sauce to suit your preference for sweetness and saltiness.
Step 5
Pour the prepared sauce over the pork and vegetables in the pan. Stir-fry quickly over high heat to ensure the sauce coats everything evenly. This is the key step! Then, add the enoki mushrooms, green onions, and green chili peppers. Stir-fry just until the mushrooms are slightly wilted. Avoid overcooking them.
Step 6
Just before turning off the heat, drizzle in about 1 teaspoon of sesame oil for an extra layer of nutty aroma and flavor. Give it one final gentle stir to combine everything beautifully. Your delicious Jeyuk Bokkeum is now ready to serve!
