This is a Jeyuk Bokkeum made with tender and chewy pork shoulder. While many cuts can be used for stir-fries, pork shoulder is exceptionally tender and melts in your mouth, creating a premium dish. It’s perfect as a hearty meal over rice or as a delicious accompaniment to drinks. What’s more, you can enjoy the leftover sauce by making fried rice, making absolutely nothing go to waste!

Main Ingredients

  • 1/2 carrot
  • 1/2 green onion
  • 1 Tbsp minced garlic

  • 2 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 Tbsp maesilcheong (plum syrup)
  • 1 Tbsp mirin (or cooking wine)

Cooking Instructions

First, let’s prepare the vegetables that will add flavor to the Jeyuk Bokkeum. Slice the onion thickly, cut the carrot into thin half-moon shapes, and chop the green onion diagonally into large pieces. It’s a good idea to make the sauce in advance to save cooking time. In a small bowl, combine the gochugaru, soy sauce, sugar, maesilcheong, and mirin, then mix well to create the sauce.

Now, let’s prepare the star of our dish: the pork shoulder. You can purchase pre-packaged pork shoulder from the supermarket, or ask your butcher to slice it for you. Pork shoulder has a great balance of lean meat and fat, making it tender and flavorful when stir-fried. About 300g is suitable for 2-3 servings.

Now, let’s start stir-frying! Heat a pan over medium heat, then add the prepared pork shoulder. Stir-fry until the surfaces turn golden brown. The fat from the pork will begin to render out.

Once the pink color of the pork disappears and it turns a general brownish hue, add 1 tablespoon of minced garlic and stir-fry together to release its aroma. The garlic aroma will blend beautifully with the meat, making it much more delicious. Stir-fry for about 30 seconds, being careful not to burn the garlic.

Reduce the heat to medium-low, then add the pre-sliced carrots, onions, and green onions to the pan. Stir-fry together for about 2-3 minutes until the vegetables soften and become tender.

Once the vegetables are somewhat cooked, pour the pre-made spicy and sweet sauce into the pan. To prevent the sauce from burning, be mindful of the heat. Stir-frying over high heat can cause the sauce to scorch.
