Main Ingredients
- 600g Pork (shoulder or belly), cut into bite-sized pieces
- 1 medium Onion
- 1 Green Onion (for aromatic oil and garnish)
Spicy & Sweet Marinade
- 2 Tbsp minced Garlic (generous)
- 2 Tbsp Gochugaru (Korean chili flakes, adjust for spice level)
- 3 Tbsp Gochujang (Korean chili paste, heaped)
- 2.5-3 Tbsp Soy Sauce (for saltiness)
- 2 Tbsp Mirin (or cooking wine)
- 1 Tbsp Plum Extract (for sweetness and depth)
- 2/3 Tbsp Sugar (adjust to taste)
- 2 Tbsp minced Garlic (generous)
- 2 Tbsp Gochugaru (Korean chili flakes, adjust for spice level)
- 3 Tbsp Gochujang (Korean chili paste, heaped)
- 2.5-3 Tbsp Soy Sauce (for saltiness)
- 2 Tbsp Mirin (or cooking wine)
- 1 Tbsp Plum Extract (for sweetness and depth)
- 2/3 Tbsp Sugar (adjust to taste)
Cooking Instructions
Step 1
First, to remove any gamey odor from the pork, soak it in rice water for about 10 minutes. Afterward, rinse lightly under running water and drain well. This step helps tenderize the meat and reduce any unwanted smell.
Step 2
In a bowl, combine all the marinade ingredients. Add 2 Tbsp of minced garlic (generously), 2 Tbsp of gochugaru, 3 Tbsp of gochujang (heaped), 2.5-3 Tbsp of soy sauce, 2 Tbsp of mirin, 1 Tbsp of plum extract, and 2/3 Tbsp of sugar. Mix everything thoroughly with a spoon until you have a well-combined marinade. You can adjust the sugar amount according to your preference.
Step 3
Peel and thinly slice the onion. Separate the white and green parts of the green onion. Slice the white parts thinly to create an aromatic base, and thinly slice the green parts to use as a garnish later. (Note: In this recipe, both parts are used together for stir-frying).
Step 4
In a large bowl, combine the drained pork, sliced onions, and half of the thinly sliced green onions (mostly the white parts). Pour the prepared spicy and sweet marinade over the ingredients. Use your hands to gently massage and mix everything together, ensuring the marinade evenly coats the pork and vegetables. Let it marinate for about 20 minutes to allow the flavors to meld.
Step 5
Heat a lightly oiled pan over medium-low heat. Add the reserved thinly sliced green onions (white parts) and stir-fry them gently until fragrant, creating an aromatic scallion oil. This step significantly enhances the overall flavor of the Jeyuk Bokkeum.
Step 6
Once the scallion oil is fragrant, add the marinated pork and vegetables to the pan. Increase the heat to medium-high and stir-fry, breaking up the pork to prevent clumping. Continue to cook until the pork and onions are fully cooked and the sauce has thickened slightly. Stir occasionally to prevent burning.
Step 7
When the pork and vegetables are cooked through and coated in the delicious, slightly reduced sauce, your Jeyuk Bokkeum is ready! ^^
