Recipe Info

  • Category : Main dish
  • Ingredient Category : Pork
  • Occasion : Everyday
  • Cooking : Stir-fry
  • Servings : 4 servings
  • Difficulty : Anyone

Main Ingredients

  • 400g Pork Shoulder (cut into bite-sized pieces)
  • 2 Green Onions (cut into 5-6cm lengths, then halved lengthwise)
  • 1 Large Onion (or 1.5 small ones, thinly sliced)
  • A little Canola Oil (for stir-frying)

Spicy & Sweet Jeyuk Sauce

  • 2 Tbsp Gochujang (Korean chili paste, leveled or slightly rounded)
  • 1.5 Tbsp Minced Garlic
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Plum Extract (Maesilcheong)
  • 2.5 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Sesame Oil + 1.5 Tbsp for finishing

Cooking Instructions

Step 1

First, let’s make the key to delicious Jeyuk Bokkeum: the sauce! In a bowl, combine 2 Tbsp Gochujang, 1.5 Tbsp minced garlic, 2 Tbsp soy sauce, 1 Tbsp mirin, 1 Tbsp plum extract, 2.5 Tbsp Gochugaru, and 1 Tbsp sesame oil. Mix them well until evenly combined. When measuring the Gochujang, avoid scooping too much; a leveled or slightly rounded tablespoon will ensure the seasoning is just right.

Step 1

Step 2

Pour all the prepared sauce over the 400g of pork shoulder. Use your hands to gently knead and mix the sauce into the pork, ensuring every piece is coated. Thoroughly mixing the sauce into the meat is crucial for the best flavor.

Step 2

Step 3

I usually prefer to marinate the pork in the sauce overnight in the refrigerator. This makes the meat even more tender and allows the flavors to deepen, resulting in a much tastier dish. However, this recipe is delicious even when cooked immediately!

Step 3

Step 4

Now, let’s prepare the vegetables. Thinly slice 1 large onion (or 1.5 small ones) into about 0.5cm strips. Cut the green onions into 5-6cm lengths, then halve them lengthwise.

Step 4

Step 5

Heat a little canola oil in a pan over medium heat, then reduce the heat to low. Add the sliced green onions first and gently stir-fry them until fragrant, creating ‘green onion oil’. Once the aroma of the green onions fills the pan, proceed to the next step.

Step 5

Step 6

Once the green onion aroma is released, add the marinated pork to the pan and stir-fry over medium heat. If the sauce starts to burn or splatter excessively, add a little water at a time while cooking. This helps prevent the sauce from burning and keeps the pork moist.

Step 6

Step 7

When the pork is almost cooked through, add the sliced onions and continue to stir-fry. Once the onions become translucent and slightly softened, turn off the heat. Finally, drizzle in 1.5 Tbsp of sesame oil and give it one gentle toss to combine everything. Your delicious Jeyuk Bokkeum is ready! Serve it over hot rice for a delightful meal.
