  • Pork belly or shoulder 300g (cut into bite-sized pieces)
  • 2 small onions
  • 1 head of napa cabbage kimchi (well-fermented)
  • 2 cloves garlic (minced or thinly sliced)
  • 1 serving of instant ramen noodles

First, thinly slice the onions into thick strips. Slicing them this way ensures they retain a pleasant texture after cooking and add a generous flavor when wrapped in lettuce with the pork.

In a bowl, combine Gochujang (2 Tbsp), Ssamjang (1 Tbsp), Soy Sauce (2 Tbsp), Maesil Cheong (1 Tbsp), Gochugaru (1 Tbsp), Sugar (1 tsp), and minced garlic (1/2 Tbsp). Mix well to create a delicious seasoning sauce. (You can add sesame oil at the end if you like.)

Heat a little oil in a pan over medium heat. Add the sliced garlic and sauté until fragrant. Once the garlic starts to turn golden, add the chopped kimchi and stir-fry. It’s best to cook the kimchi until it softens and the sharp sourness mellows slightly. (Traditionally, you might start by making scallion oil for extra flavor, but if you’re living alone, scallions might not always be readily available! Garlic flavor alone will make it wonderfully delicious.)

Once the kimchi is partially cooked, add the pork pieces to the pan. Stir-fry until the surface of the pork begins to change color. Then, pour in the prepared seasoning sauce and stir well to coat the pork evenly. Adding a little extra sugar at this stage can help tenderize the meat and enhance the savory depth of the sauce.

As the ingredients cook, the pork and kimchi will release their juices, creating a delicious, slightly saucy consistency without needing to add extra water. The sizzling sound as everything melds together is truly mouthwatering!
