Spicy & Sweet Stir-fried Pork (Jeyuk Bokkeum)
Super Simple Stir-fried Pork Made with Pork Hind Leg
I made Jeyuk Bokkeum using pork hind leg that I bought. Pork hind leg is about half the price of pork front leg, but it tastes just as delicious when stir-fried with seasoning! 🙂
Main Ingredients- 500g Pork hind leg
- 1/3 Onion (approx. 60g)
- 50g Carrot
- 1/2 stalk Green onion (approx. 50g)
- 50g Oyster mushrooms
Seasoning Ingredients- 3 Tbsp Gochugaru (Korean chili flakes)
- 4 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Soy sauce
- 2 Tbsp Sugar
- 1 Tbsp Sesame oil
- 3 Tbsp Mirin (rice wine)
- Pinch of black pepper
- 1 Tbsp Minced garlic
- 3 Tbsp Gochugaru (Korean chili flakes)
- 4 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Soy sauce
- 2 Tbsp Sugar
- 1 Tbsp Sesame oil
- 3 Tbsp Mirin (rice wine)
- Pinch of black pepper
- 1 Tbsp Minced garlic
Cooking Instructions
Step 1
I purchased a pack of pork hind leg, which was around 1kg and cost about 6,000 KRW! It’s incredibly cost-effective. For this recipe, I’ll be using half of it, which is 500g.
Step 2
In a bowl, place the 500g of pork hind leg. Let’s start making the Jeyuk Bokkeum seasoning. First, add 3 tablespoons of Gochugaru (Korean chili flakes) for a spicy kick.
Step 3
Next, add 4 tablespoons of Gochujang (Korean chili paste). Gochujang is key to achieving the characteristic flavor and color of Jeyuk Bokkeum.
Step 4
Add 3 tablespoons of soy sauce to enhance the savory umami flavor. This will help balance the overall seasoning.
Step 5
Add 2 tablespoons of sugar. Sugar will mellow out the spiciness and add a touch of sweetness.
Step 6
Add 1 tablespoon of sesame oil and 3 tablespoons of Mirin (Korean rice wine). Sesame oil adds a nutty aroma, while Mirin helps tenderize the pork and gives it a glossy finish. Finally, add a pinch of black pepper.
Step 7
Add 1 tablespoon of minced garlic. Garlic is an essential ingredient that deepens the overall flavor profile.
Step 8
Now, use your hands to thoroughly mix the pork with all the seasoning ingredients. Gently knead the mixture to ensure the seasoning is well-absorbed into the meat. Marinating for at least 10 minutes will yield even better results.
Step 9
It’s time to prepare the vegetables. Thinly slice 1/3 of an onion. Cut 50g of carrot into thin slices or julienne. Slice 1/2 green onion diagonally, and tear or cut 50g of oyster mushrooms into bite-sized pieces after removing the tough ends. It’s best to cut the vegetables into appropriate sizes so they don’t become too soft when stir-fried with the meat.
Step 10
Lightly oil a heated pan and add the marinated pork first. Stir-fry over high heat to sear the surface of the meat.
Step 11
Once the pork is partially cooked, add 1 cup (200ml) of water. Adding water here will help the pork cook tenderly, prevent the sauce from burning, and create a delicious, slightly saucy consistency. Reduce the heat to medium and cook the pork thoroughly.
Step 12
When the pork is almost fully cooked, add the pre-sliced onion, carrot, oyster mushrooms, and green onion. Turn the heat back up to high and stir-fry quickly until the vegetables are slightly wilted and about half cooked. Stir-frying for too long can make the vegetables lose their crispness. Drizzle a little sesame oil just before turning off the heat to enhance the aroma.
Step 13
Transfer the delicious stir-fried Jeyuk Bokkeum to a serving dish. It’s now ready to enjoy! Serve with warm rice and wrap it in lettuce leaves with other side dishes for a complete and satisfying meal.
