Main Ingredients- 1 packet instant ramen noodles
- 1/2 onion
- 1/4 carrot
- 10 perilla leaves
- 1/4 green onion stalk
Seasoning- 1 Tbsp chili powder (gochugaru)
- 2/3 of the ramen soup packet

Cooking Instructions
Step 1
Before you begin cooking, let’s get the vegetables prepped. Thinly slice the carrot and green onion into matchsticks. Slice the onion into strips or finely chop it. Wash the perilla leaves, pat them dry, and cut them into 2-3 pieces. Having your ingredients ready will make the cooking process much smoother and faster.
Step 2
Bring a pot of water to a rolling boil. Add the ramen noodles and cook them until they are about 50% done. Immediately turn off the heat and drain most of the water, leaving only a small amount at the bottom of the pot – just enough to barely cover the noodles. Overcooking the noodles at this stage will make them mushy when stir-fried. A little starchy water remaining helps the sauce adhere better.
Step 3
Add the ramen soup base (2/3 of the packet), chili powder, and the julienned carrots to the pot. Stir-fry everything for about 30 seconds. You’ll notice the carrots start to soften slightly and a spicy aroma will fill the air. Make sure your pan is hot to help retain the crispness of the vegetables.
Step 4
Now, add the sliced onions and green onions to the pot. Continue to stir-fry for another 30 seconds. As soon as the onions begin to turn translucent, it’s time to move on; avoid overcooking them. Keeping the vegetables crisp is key to this dish’s delicious texture.
Step 5
Finally, toss in the chopped perilla leaves and immediately turn off the heat. Perilla leaves are delicate and only need a brief moment to wilt. Stir everything together gently to combine.
