Main Ingredients

  • 2 sheets of square fish cakes (eomuk) (approx. 100g)
  • 1/2 medium onion
  • A small amount of green onion (approx. 1/4 stalk)
  • 1 medium king oyster mushroom
  • 2 Tbsp water (approx. 30ml)

Seasoning

  • 1 Tbsp soy sauce (approx. 15ml)
  • 1 Tbsp cooking oil (approx. 15ml)
  • 1 Tbsp red chili powder (gochugaru) (approx. 7g)
  • 1/2 Tbsp xylos sugar (approx. 5g, or regular sugar)

Cooking Instructions

Step 1

First, prepare the ingredients. Cut the square fish cakes into bite-sized pieces, about 2cm wide. Thinly slice the onion, and cut the green onion diagonally. Slice the king oyster mushroom into 2-3 pieces lengthwise. Cutting the vegetables to a similar size as the fish cakes ensures even cooking and a pleasant presentation.

Heat 1 Tbsp of cooking oil in a pan over medium-low heat. Add the seasoning ingredients: 1 Tbsp soy sauce, 1 Tbsp red chili powder, and 1/2 Tbsp xylos sugar. Stir-fry for about 30 seconds to release their aromas. Be careful not to burn the seasonings, and break up any clumps.

Once the seasoning mixture starts to simmer gently, add all the prepared ingredients: the fish cakes, onion, and king oyster mushroom. Stir-fry over high heat quickly to coat everything evenly with the sauce. Ensure the seasonings are well distributed.

As you stir-fry, add 2 Tbsp of water intermittently. This helps prevent the sauce from burning and keeps the dish moist. The dish is nearly ready when the king oyster mushrooms become slightly translucent and tender. At this point, add the green onions and stir-fry for about 1 more minute. It’s best to keep the onions and green onions slightly crisp for a better texture, so avoid overcooking them. Once all the ingredients are well combined and heated through, remove from heat and serve.
