Main Ingredients- 80g dried anchovies for stir-frying
- Fiddlehead ferns, as desired (approx. 150g)
Seasoning- 4 Tbsp oligodang (corn syrup) (approx. 60g)
- 2 Tbsp soy sauce (approx. 30ml)
- A drizzle of sesame oil (1/2 Tbsp)
- A sprinkle of toasted sesame seeds (1/2 Tbsp)

Cooking Instructions
Step 1
First, trim the ends off the fiddlehead ferns and wash them thoroughly. You can cut them in half if you prefer, but leaving them whole makes for a more attractive presentation! For a crispier texture, you can make a small slit along the side.
Step 2
Without adding any oil, place the dried anchovies in a non-stick pan and stir-fry them over low heat for about 1 minute. This step helps to remove any fishy smell and enhances their nutty flavor. Be careful not to burn the anchovies.
Step 3
Shake the stir-fried anchovies in a sieve to remove any fine powder. You might be surprised by how much anchovy dust is produced, so this step ensures a cleaner final dish.
Step 4
Return the dusted anchovies to the pot. Add 4 tablespoons of oligodang and 2 tablespoons of soy sauce. Stir-fry until the sauce coats the anchovies evenly. Keep the heat on low to prevent the anchovies from burning.

Now, add the prepared fiddlehead ferns to the pot. Mix them well with the anchovy sauce and continue to stir-fry. Cook until the fiddlehead ferns are slightly tender but still retain some crispness.

Continue to stir-fry everything over low heat for about 2 more minutes, and your delicious fiddlehead fern and anchovy stir-fry will be ready! The crispness of the ferns, the nuttiness of the anchovies, and the sweet and savory sauce create a fantastic side dish for rice.
