Today, I’m sharing a spicy and sweet stir-fried side dish using ‘Ilmi-chae’ (dried shredded squid/fish jerky). This recipe offers a distinctive flavor that will surely whet your appetite, making it a perfect ‘rice-thief’ side dish. It’s easy for anyone to follow, so please give it a try!

Main Ingredients

  • 200g Dried Shredded Squid (Ilmi-chae)
  • 1 stalk Green Onion

Seasoning

  • 2 Tbsp Soy Sauce (Guk-ganjang or regular)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Brown Sugar (or light brown sugar)
  • 2 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • A little Canola Oil (or cooking oil)
  • A little Sesame Seeds

Cooking Instructions

Step 1

First, wash the green onion thoroughly. Finely chop both the white and green parts into bite-sized pieces. Heat a pan over medium heat and add a splash of canola oil. Add the chopped green onions and sauté them gently until they become translucent and fragrant. This process creates a flavorful green onion oil, significantly enhancing the dish’s aroma.

Once the green onions are softened and fragrant, add the 200g of dried shredded squid (Ilmi-chae) to the pan. Next, add 2 tablespoons of soy sauce to begin seasoning the squid.

Adjust the heat to medium and stir-fry quickly to ensure the soy sauce is evenly distributed throughout the squid. Be careful not to overcook, as this can make the squid tough. Stir-frying for just the right amount of time is key.

Now it’s time to add the remaining seasoning ingredients. Add 1 tablespoon of gochugaru (Korean chili flakes), 1 tablespoon of minced garlic, 1 tablespoon of brown sugar, and 2 tablespoons of mirin (or cooking wine). You can adjust the sugar quantity to your preference. Sprinkle all the seasonings evenly over the squid. Drizzle a little more canola oil to help the seasonings coat the squid.

Turn the heat up to medium-high and stir-fry briskly to combine everything well. Cook until the gochugaru and seasonings are evenly coated, and the squid starts to look glossy. Once done, turn off the heat. Finish by sprinkling some sesame seeds for an added nutty flavor. Transfer the finished stir-fried Ilmi-chae to a serving plate. This delicious side dish is sure to make you want to finish your bowl of rice!
