Delicious Stir-Fried Cockles Made with Seasonal Delights
Cockles are incredibly delicious no matter how you cook them, and now is the perfect season! Today, we’re making stir-fried cockles. They’re fantastic as a side dish for rice, a delightful appetizer with drinks, or even mixed into rice for a flavorful meal. Enjoy this simple yet satisfying dish!
Main Ingredients- Cooked and shelled cockle meat: 2/3 bowl (approx. 100-150g)
- 1 Cheongyang pepper (Korean chili pepper)
- 1/2 Red chili pepper
- 4 Tbsp minced green onion (white parts preferred)
- 2 Tbsp minced onion
- 1 Tbsp minced garlic
Seasoning- 1 Tbsp Gochugaru (Korean chili powder, adjust to taste)
- 1 Tbsp Soy sauce (use regular soy sauce)
- 1 tsp Fish sauce or Tuna extract (for umami)
- 1 Tbsp Mirin or cooking wine (to remove odor)
- 1 Tbsp Plum extract or syrup (for sweetness and flavor)
- Pinch of black pepper
- 1 Tbsp Sesame oil
- 1 Tbsp Sesame seeds
- 1 Tbsp Gochugaru (Korean chili powder, adjust to taste)
- 1 Tbsp Soy sauce (use regular soy sauce)
- 1 tsp Fish sauce or Tuna extract (for umami)
- 1 Tbsp Mirin or cooking wine (to remove odor)
- 1 Tbsp Plum extract or syrup (for sweetness and flavor)
- Pinch of black pepper
- 1 Tbsp Sesame oil
- 1 Tbsp Sesame seeds
Cooking Instructions
Step 1
First, prepare the cockle meat. If you have pre-cooked and shelled cockles, your cooking process will be much smoother. If using fresh cockles, bring a pot of water to a boil with a pinch of salt. Add the cockles and cook until their shells open. Drain the cockles, rinse them under cold water, and extract the meat.
Step 2
Next, prepare the vegetables that will enhance the flavor of your stir-fry. Finely mince the Cheongyang pepper and red chili pepper, removing the seeds. Also, finely mince the green onion and onion. Using the white parts of the green onion will add a better flavor.
Step 3
Now, let’s start stir-frying! Heat 1-2 tablespoons of cooking oil in a pan over medium-low heat. Add the minced onion, minced green onion, and minced garlic. Sauté until fragrant, about 1-2 minutes, until the onion becomes translucent and releases its sweet aroma. Then, add the prepared cockle meat, minced Cheongyang pepper, and red chili pepper, and stir-fry together.
Step 4
Once the cockles are somewhat cooked, add all the prepared seasoning ingredients (gochugaru, soy sauce, fish sauce, mirin, plum extract, and black pepper). Stir well to coat the ingredients evenly and continue to stir-fry for about 2-3 minutes until the flavors meld. Be mindful of the heat to prevent the seasoning from burning. Just before turning off the heat, stir in the sesame oil and sesame seeds for a glossy finish and enhanced aroma.
Step 5
Transfer the delicious stir-fried cockles to a serving dish. You’ve now created a wonderful dish! Enjoy it as a topping for rice or simply as a flavorful side dish.
