Ingredients- 2 bowls of Jiri anchovies (small dried anchovies, approx. 100g)
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Oligodang (corn syrup or other liquid sweetener)
- 2 Tbsp Mirin (rice wine)
- 2 Tbsp minced garlic
- 1 Tbsp ginger wine (or substitute with Mirin or Cheongju)
- 1 Tbsp sesame oil
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, prepare the Jiri anchovies to remove any fishy smell and make them crispier. Heat a dry pan over medium heat and lightly toast the anchovies for about 1-2 minutes. Be careful not to burn them. After toasting, place the anchovies in a sieve and gently shake to remove any broken bits for a cleaner texture.
Step 2
Let’s make the delicious sauce! In a small pot or pan, combine 2 Tbsp Gochujang, 2 Tbsp Oligodang, 2 Tbsp Mirin, and 1 Tbsp ginger wine (if you don’t have ginger wine, you can substitute it with Mirin or Cheongju). Stir well and bring to a simmer over medium heat. The sauce will thicken and become glossy as it cooks.
Step 3
Now, add the toasted Jiri anchovies to the simmering sauce. Reduce the heat to low and gently stir-fry the anchovies until they are evenly coated with the sauce. Once the anchovies are well-coated and glossy, just before turning off the heat, drizzle in 1 Tbsp of sesame oil for added aroma and flavor. Finally, sprinkle with toasted sesame seeds to finish.
