Braising Sauce Ingredients (Tablespoon Measurement)

  • 6 Tbsp Soy Sauce
  • 3 Tbsp Mirin (or Rice Wine)
  • 2 Tbsp Gochugaru (Korean Chili Flakes)
  • 2 Tbsp Ketchup
  • 1 Tbsp Oyster Sauce
  • 1 Tbsp Gochujang (Korean Chili Paste), generously packed
  • 1 Tbsp Sugar
  • 4 Tbsp Oligodang (Corn Syrup or Rice Syrup)
  • 0.5 Tbsp Minced Garlic
  • 0.3 Tbsp Black Pepper
  • 300ml Water

Cooking Instructions

Step 1

First, it’s important to remove any gamey smell from the chicken thighs. Rinse the 750g of boneless chicken thighs and then soak them in about 500ml of milk for 30 minutes. This step will thoroughly remove any unpleasant odor.

While the chicken is soaking, let’s prepare the delicious braising sauce! Start by finely dicing or thinly slicing the onion. The sweetness and flavor of the onion will add depth to the sauce.

Heat 1 tablespoon of cooking oil in a wok or deep pan over medium heat. Add the prepared onion and sauté until it becomes translucent. Sautéing the onion until it’s soft and releases its sweetness is key.

Once the onion is sweetly cooked and turns translucent, turn off the heat briefly. Pour in 300ml of clean water

and add all the sauce ingredients: 6 tablespoons soy sauce, 3 tablespoons mirin, 2 tablespoons gochugaru, 2 tablespoons ketchup, 1 tablespoon oyster sauce, 1 generous tablespoon gochujang, 1 tablespoon sugar, 4 tablespoons oligodang, 0.5 tablespoon minced garlic, and a pinch of black pepper. Mix everything well.

Once the sauce is well combined, turn the heat back on to high and bring it to a boil.

Rinse the chicken thighs that were soaking in milk under cold water to remove excess milk, then place them into the pan skin-side down. Cooking the skin first will make it crispier and more flavorful.

Once the sauce comes back to a boil after adding the chicken, use a spoon to ladle the delicious sauce over the chicken pieces. This ensures the chicken absorbs the flavors evenly.

Now, cover the pan with a lid and reduce the heat to medium. Let the chicken cook for 15 minutes. Covering the pan helps the chicken cook through and absorb the sauce.
