  • Difficulty : Beginner

Main Ingredients

  • 2 bowls of warm cooked rice
  • 200g peeled and deveined shrimp
  • 1/2 medium onion, thinly sliced
  • 3 medium button mushrooms, sliced
  • 1/6 head of broccoli, cut into small florets
  • 3 cloves garlic, minced
  • 1 tsp sesame seeds
  • 1 tsp sesame oil
  • 1 Tbsp cooking wine (mirin or sake, for shrimp)
  • 1 Tbsp vegetable oil

Spicy & Sweet Hot Chili Sauce

  • 2 Tbsp ketchup
  • 1 Tbsp hot chili sauce (adjust to your spice preference)
  • 1 Tbsp soy sauce
  • 1 tsp sugar
  • 1 Tbsp cooking wine (mirin)
  • 1 tsp corn syrup (or honey)
  • Pinch of black pepper

Cooking Instructions

Step 1

Rinse the shrimp briefly under cold water and pat them dry. Toss the shrimp with 1 tablespoon of cooking wine (mirin or sake). Let it marinate for about 5-10 minutes to remove any fishy odor and tenderize the shrimp.

Step 1

Step 2

Heat 1 tablespoon of vegetable oil in a pan over medium heat. Add the minced garlic and sauté until fragrant and lightly golden, about 1-2 minutes. Be careful not to burn the garlic.

Step 2

Step 3

Once the garlic is fragrant, add the marinated shrimp to the pan. Stir-fry the shrimp until they turn pink and opaque, approximately 2-3 minutes. Avoid overcooking to maintain a tender texture.

Step 3

Step 4

When the shrimp are almost cooked, add the thinly sliced onion to the pan. Continue to stir-fry until the onions become translucent and slightly softened, about 3-4 minutes.

Step 4

Step 5

Add the broccoli florets to the pan. Stir-fry for another 2-3 minutes until the broccoli is tender-crisp. You can blanch the broccoli beforehand for a softer texture, but stir-frying raw preserves a nice crunch.

Step 5

Step 6

Finally, add the sliced mushrooms to the pan. Cook for an additional 2-3 minutes until the mushrooms release their moisture and are tender.

Step 6

Step 7

Now, it’s time for the sauce! Add all the sauce ingredients (ketchup, hot chili sauce, soy sauce, sugar, cooking wine, corn syrup, and black pepper) to the pan. Stir everything together quickly over medium-low heat to coat all the ingredients evenly. Cook until the sauce thickens slightly, making sure it doesn’t burn.

Step 7

Step 8

Once the sauce has thickened and beautifully coats the ingredients, turn off the heat. Stir in 1 teaspoon of sesame oil and 1 teaspoon of sesame seeds for an extra layer of flavor and aroma.

Step 8

Step 9

Serve the delicious shrimp stir-fry generously over a bowl of warm cooked rice. This dish is fantastic on its own, but you can also top it with a fried egg or sprinkle some shredded seaweed for added enjoyment. Enjoy your flavorful meal!
