Essential Ingredients

  • 15 fresh large shrimp
  • 2 Tbsp finely minced carrot
  • 2 Tbsp chopped green onion
  • 1 Tbsp finely diced green bell pepper
  • 1/2 Tbsp minced garlic
  • Pinch of salt
  • Pinch of black pepper
  • 1 Tbsp cooking wine (mirin or rice wine)

Spicy & Sweet Chili Sauce Ingredients

  • 1/2 cup water (using a paper cup)
  • 3 Tbsp ketchup
  • 1/2 Tbsp corn syrup (or rice syrup)
  • 1/4 Tbsp gochujang (Korean chili paste)
  • 1/4 Tbsp red pepper flakes
  • 2 Tbsp cooking wine (mirin or rice wine)

Cooking Instructions

Step 1

Rinse the fresh large shrimp thoroughly under running water. Peel the shrimp and carefully remove the digestive tract (the black line) from the back using a toothpick to prepare them cleanly.

Step 1

Step 2

Finely mince the carrot. Chop the green onion and green bell pepper into similar small pieces. Finely dicing the vegetables ensures the sauce coats evenly and creates a softer texture.

Step 2

Step 3

In a bowl, gently mix the prepared shrimp with 1 Tbsp of cooking wine. The cooking wine helps to remove any fishy odor and enhances the tender texture. Season lightly with salt and pepper.

Step 3

Step 4

In a small bowl, combine 1/2 cup water, 3 Tbsp ketchup, 1/2 Tbsp corn syrup, 1/4 Tbsp gochujang, 1/4 Tbsp red pepper flakes, and 2 Tbsp cooking wine. Mix well until smooth to create the chili sauce. Ensure the ratios are correct for a delicious sauce.

Step 4

Step 5

Heat a non-stick pan over medium-low heat and add a generous amount of olive oil. Sauté the 1/2 Tbsp minced garlic until fragrant. Be careful not to burn the garlic; bringing out a gentle garlic aroma is key.

Step 5

Step 6

Once the garlic is fragrant, add the minced carrot, chopped green onion, and diced green bell pepper to the pan. Stir-fry over medium heat until the vegetables are slightly tender. The vegetables will release sweetness as they cook, enhancing the sauce’s flavor.

Step 6

Step 7

When the vegetables are sufficiently stir-fried, add the seasoned shrimp to the pan. Stir-fry quickly until the shrimp turn pink. Overcooking shrimp can make them tough, so move to the next step as soon as they change color.

Step 7

Step 8

Finally, pour the prepared sweet and spicy chili sauce into the pan and stir quickly to coat all the ingredients evenly. Once the sauce thickens and coats the shrimp and vegetables, turn off the heat and enjoy! This dish is perfect as a side for rice or as a snack.
