To make a special dish for my husband who has been away on a long business trip, I’m preparing his favorite seasoned clams. Let’s create a simple yet delicious meal!

  • 1/4 onion
  • 2 chili peppers (e.g., green or red)

Seasoning Ingredients

  • 1 Tbsp gochugaru (Korean chili powder)
  • 3 Tbsp soy sauce
  • 1/2 Tbsp sesame oil
  • 1/2 Tbsp sugar
  • 1/2 Tbsp minced garlic

Cooking Instructions

It’s crucial to clean the fresh cockles thoroughly. Add 1 tablespoon of coarse salt and scrub the cockles vigorously. By rubbing the cockles against each other, you can effectively remove impurities from the shell. Rinse them under running water multiple times until the shells look clean, just like in the photo.

Pour enough water into a pot to fully cover the cockles, add 1 tablespoon of coarse salt, and bring it to a boil over high heat.

Once the water is rapidly boiling, it’s time to add the cockles!

Add the cleaned cockles to the boiling water. If you stir the cockles in one direction, it’s said to make them easier to open later. (Try this method if you want them to be easier to shell. If you’re feeling lazy, just boil them as is!)

While the cockles are boiling, let’s prepare the delicious seasoning. Get a bowl ready to mix the seasoning, and add 1 tablespoon of gochugaru (Korean chili powder).

Add 3 tablespoons of soy sauce for a savory depth of flavor.

Add just half a tablespoon of sesame oil for a nutty aroma.

Add half a tablespoon of sugar to bring a touch of sweetness. This sweetness balances the overall flavor profile.

Finely mince 1/4 onion and 2 chili peppers. Adding half a tablespoon of minced garlic completes the flavorful seasoning! Mix all the ingredients well. (You can adjust the amount of gochugaru, soy sauce, and sugar to your taste for a more personalized flavor.)

Now, take out the boiled cockles, drain them, and start opening the shells. If you open only half the shell and place the seasoning on top, it looks nice and is easy to eat. Alternatively, you can remove just the clam meat, mix it with the seasoning, and eat it mixed with rice for an incredible taste! Any leftover clam meat can be portioned and frozen for later use. Clam seasoning is very simple to make, but opening the shells can be a bit labor-intensive. However, think of the delicious seasoned clams and enjoy the process! You can also enjoy the meat mixed with rice, it’s super delicious! I portioned some of the meat and stored it in the freezer.
