Spicy & Sweet Pork Stir-fry (Jeyuk Bokkeum) with Thinly Sliced Pork Belly & Neck
A Delicious Jeyuk Bokkeum Made with Thinly Sliced Pork Belly and Neck – Quick and Easy!
This Jeyuk Bokkeum recipe is incredibly quick to prepare because it uses thinly sliced pork neck (daepae moksal). Enjoy a fast and flavorful stir-fry that’s perfect for busy days.
Main Ingredients- 250g thinly sliced pork belly & neck (use a little cooking oil if the cut is lean)
- 10 cloves whole garlic (or thinly sliced)
- 1 onion (thinly sliced)

Cooking Instructions
Step 1
Prepare all the ingredients for the Jeyuk Bokkeum. You can lightly rinse the thinly sliced pork belly and neck under cold water and pat them dry with paper towels. Peel the garlic cloves, and thinly slice the onion.
Step 2
Slice the onion into approximately 0.5cm thick strips. Slicing them too thinly might cause them to break apart during cooking. If you prefer a stronger garlic flavor, you can thinly slice the whole garlic cloves.
Step 3
Now, let’s make the star of the dish: the sauce! In a small bowl, combine 1 Tbsp sugar, 1 Tbsp gochugaru, 1 Tbsp maesilcheong, 1 Tbsp mirin, 1 Tbsp soy sauce, 1 Tbsp corn syrup, 1 Tbsp gochujang, 1 Tbsp minced garlic, and 1 Tbsp ginger juice.
Step 4
Whisk the sauce ingredients together thoroughly until well combined and smooth. This sauce is key to the deliciousness of your Jeyuk Bokkeum, so mix it with care! Taste and adjust the sweetness or spiciness if needed.
Step 5
Heat about 1-2 Tbsp of cooking oil in a pan over medium-low heat. Add the whole garlic cloves and sauté until fragrant and lightly golden brown. (If using fatty thinly sliced pork belly, you can reduce or omit the cooking oil. If using leaner pork neck, a little oil is recommended.) Once the garlic is aromatic, add the pork.
Step 6
Sprinkle a pinch of black pepper over the pork as it cooks to help eliminate any gamey odors. Stir the pork occasionally to prevent it from sticking to the pan. Since the thinly sliced pork cooks quickly, aim to cook it until about 80% done. Overcooking can make it tough.
Step 7
Once the pork is mostly cooked, pour all the prepared sauce into the pan. Turn up the heat to high and stir-fry quickly to coat the pork evenly with the sauce. Be careful not to burn the sauce!
Step 8
When the sauce has coated the pork well, add the sliced onions to the pan and stir-fry them with the pork. Once the onions become translucent, turn off the heat and drizzle in a little sesame oil for extra flavor. Transfer the delicious Jeyuk Bokkeum to a serving dish and enjoy with a bowl of hot rice. It’s also great served with lettuce wraps!
