- Water 1/3 cup (approx. 60ml)
- Gochujang (Korean chili paste) 2 tablespoons
- Mirin or cooking wine 2 tablespoons
- Oyster sauce 1 tablespoon
- Sugar 1 tablespoon
- Plum extract or syrup 1.5 tablespoons
- Gochugaru (Korean chili flakes) 1 tablespoon
- Soy sauce 1.5 tablespoons
- Water 1/3 cup (approx. 60ml)
Cooking Instructions
Step 1
First, prepare the julienned green onions. You can use pre-cut green onions from the store, or thinly slice fresh green onions or the white parts of leeks yourself. If you love green onions, don’t be shy – add plenty for a richer flavor!
Step 2
If you’re using leeks or green onions with white parts, make a cut about halfway up the white section.
Step 3
Turn the leek or green onion over, spread it out, and thinly slice it into julienne strips. For the green parts, overlap them and slice them into strips as well. Aim for thin strips for the best texture.
Step 4
Heat a pan over medium heat with a little oil. Add 1 tablespoon of minced garlic and stir-fry over low heat until fragrant. This creates the aromatic ‘green onion oil’ (or garlic oil in this case) that forms the flavor base for your dish.
Step 5
In a bowl, combine all the sauce ingredients: gochujang, mirin, oyster sauce, sugar, plum extract, gochugaru, and soy sauce. Add 1/3 cup of water and mix well until thoroughly combined and smooth.
Step 6
In a heated pot or deep pan, lay the thinly sliced pork belly pieces one by one. Spoon half of the prepared sauce evenly over the pork belly. Reserve the remaining sauce for making fried rice later.
Step 7
Arrange the julienned green onions generously on top of the sauced pork belly. Cover the pot with a lid and cook over medium heat for about 10 minutes. This allows the pork and green onions to cook through and absorb the delicious sauce.
Step 8
After 10 minutes, lift the lid. You should have a good amount of sauce remaining, similar to the picture. If it seems too dry, add a little more water. If the flavor needs adjusting, add a bit more of the reserved sauce.
Step 9
Once you’ve enjoyed your delicious pork belly and green onion stir-fry, it’s time for fried rice! Add a generous amount of rice to the remaining sauce and pork. If it tastes a bit bland, add some of the reserved sauce; if it’s too salty, add more rice and mix everything together. You’ll have a fantastic fried rice ready to enjoy! ^^*
