- Sesame Seeds (for garnish)
- 9 Tbsp Gochugaru (Korean chili flakes)
- 5 Tbsp Kkanari Fish Sauce
- 2 Tbsp Jin Ganjang (Soy Sauce for soup/stew)
- 9 Tbsp Rice Syrup (or Corn Syrup)
- 2 Tbsp Maesil Cheong (Plum Extract)
- 1 Pear (medium size)
- 7 Red Chili Peppers
- 1 Onion (medium size)
- 1/4 Carrot
- 1 Tbsp Sesame Oil
- Sesame Seeds (for garnish)
Cooking Instructions
Step 1
First, prepare the frozen blue crabs. You can either rinse them under cold running water or let them thaw at room temperature. It’s best to marinate them shortly after they’ve slightly thawed, as over-thawing can affect their freshness.
Step 2
Now, let’s prepare the base for our flavorful marinade. In a blender, combine the peeled pear (1 medium), onion (1 medium), carrot (1/4), and red chili peppers (7). Blend them until you achieve a smooth purée. A finely blended mixture ensures a smooth and delicious sauce.
Step 3
To the blended vegetable mixture, add the sauce ingredients. Stir in Gochugaru (9 Tbsp – adjust to your spice preference), Jin Ganjang (2 Tbsp), Kkanari Fish Sauce (5 Tbsp), Maesil Cheong (2 Tbsp), and Rice Syrup (or Corn Syrup) (9 Tbsp) for sweetness. Mix thoroughly until all ingredients are well combined.
Step 4
It’s a good idea to make a generous batch of this special sauce. Set aside about 4 tablespoons of the prepared sauce for marinating the crabs. The remaining sauce can be stored in an airtight container in the refrigerator and used for other dishes like fried rice or stir-fries.
Step 5
It’s time to marinate the crabs! Lightly coat the thawed crabs with 2 tablespoons of Gochugaru. Then, add the 4 tablespoons of the special sauce you set aside and gently toss to coat. Be careful not to crush the crab meat while mixing.
Step 6
When mixing the crabs with the sauce, use a spoon or spatula to quickly yet gently combine them. Ensure the sauce is evenly distributed. Finally, drizzle in 1 tablespoon of sesame oil and sprinkle with sesame seeds for a fragrant finish. Your delicious Yangnyeom Gejang is ready! You can enjoy it immediately, or let it marinate in the refrigerator for a while to allow the flavors to deepen.
