Spicy and Sweet Marinated Raw Crab! The Flavorful Gochugaru-Based Seasoning is Unbeatable~
When you lose your appetite, marinated raw crab comes to mind! I’ve made a delicious batch today. This dish is perfect for those times when you just don’t feel like eating.
Main Ingredients- 1 pack frozen snow crab, 12 pieces
Crab Marinade- 2.5 Tbsp Mirin (approx. 40ml)
- 0.5 Tbsp Vinegar
- 0.5 Tbsp Soy Sauce
Spicy & Sweet Seasoning- 4 Tbsp Gochugaru (Korean chili powder)
- 2 Tbsp Soy Sauce
- 2 Tbsp Mirin
- 4 Tbsp Corn Syrup
- 2 Tbsp Sugar
- 1/4 tsp Ginger Powder
- 2 Tbsp Gochujang (Korean chili paste)
- 1/4 tsp Sesame Seeds
- 2 Tbsp Minced Garlic
- 2.5 Tbsp Mirin (approx. 40ml)
- 0.5 Tbsp Vinegar
- 0.5 Tbsp Soy Sauce

Cooking Instructions
Step 1
First, prepare 1 pack of frozen snow crab, containing 12 pieces. Thaw the crab under cold running water, then carefully clean any debris from its surface. Next, in a bowl, combine the marinade ingredients: 2.5 Tbsp Mirin (approximately 40ml), 0.5 Tbsp Vinegar, and 0.5 Tbsp Soy Sauce. Add the cleaned crab to this mixture and toss gently to coat. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or ideally for about 4 hours, to allow the flavors to penetrate deeply. Tip: For the best quality, choose frozen crabs that are packed in rigid rectangular cardboard boxes directly from the freezer, rather than those that have been thawed and repackaged in seafood sections.
Step 2
Next, prepare the spicy and sweet seasoning. In a separate bowl, combine all the seasoning ingredients: 4 Tbsp Gochugaru, 2 Tbsp Soy Sauce, 2 Tbsp Mirin, 4 Tbsp Corn Syrup, 2 Tbsp Sugar, 1/4 tsp Ginger Powder, 2 Tbsp Gochujang, 1/4 tsp Sesame Seeds, and 2 Tbsp Minced Garlic. Mix these ingredients thoroughly with a spoon or whisk until you have a smooth, well-combined paste. Once the seasoning is ready, add the marinated crab to this bowl and mix gently to ensure each piece is evenly coated. Then, place the bowl back in the refrigerator to let the flavors meld and mature. Tip: A standard tablespoon (Tbsp) is approximately 15ml. If you don’t have measuring spoons, a regular Korean rice spoon holds about 8ml, which can be used as a close estimate.
Step 3
After at least an hour of marinating the crab and seasoning the sauce, it’s time to combine them. Carefully pour the prepared seasoning over the marinated crab. Gently toss the crab and seasoning together until every piece is well-coated. While it’s delicious to eat right away, for an even richer flavor, let the marinated crab rest in the refrigerator for another day. This allows the seasoning to fully develop and seep into the crab meat.
