Intrigued by Baek Jong Won’s All-Purpose Mala Sauce found at the supermarket, I decided to try it with chicken drumettes. The result is a wonderfully flavorful and addictive dish!

Main Ingredients

  • 700g Chicken Drumettes
  • Milk (for deodorizing)
  • 5 cloves Garlic
  • 1/2 stalk Green Onion
  • A little Cooking Oil

Mala Sauce

  • 50g Baek Jong Won All-Purpose Mala Sauce
  • 50g Water

Marinade

  • 1 tsp Salt
  • 2 Tbsp Cooking Wine (Mirin)
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Olive Oil
  • 2 Tbsp Chopped Parsley

Cooking Instructions

Step 1

Make deep cuts into the thickest part of the chicken drumettes. This helps the marinade penetrate better and ensures the chicken cooks evenly.

Place all the scored chicken drumettes into a large bowl.

Soak the chicken drumettes in milk for 10 minutes. This step is crucial for removing any gamey odor from the chicken. If you’re using very fresh chicken, you might be able to skip this and just rinse it with cold water. However, if you’re sensitive to chicken smells or want extra reassurance, this milk soak is highly recommended.

After 10 minutes, rinse the chicken drumettes thoroughly under cold running water to wash away any impurities.

Now, let’s prepare the marinade. Add 1 Tbsp minced garlic, 2 Tbsp olive oil, 1 tsp salt, 2 Tbsp cooking wine, 1 Tbsp soy sauce, and 2 Tbsp chopped parsley to the bowl with the chicken.

Mix everything well to ensure the chicken is evenly coated with the marinade. Let it sit for 5 minutes to allow the flavors to meld.

Line an oven tray with parchment paper and arrange the marinated drumettes in a single layer. Bake in a preheated oven at 180°C (350°F) for 25 minutes. Then, flip them over and bake for another 10 minutes until golden brown and cooked through.

For the sauce, I used Baek Jong Won’s All-Purpose Mala Sauce, which I bought from the supermarket. It made preparation so easy!

Slice the green onion into large pieces, suitable for stir-frying with the chicken.

Trim the ends off the garlic cloves and slice them into thin rounds, about 2-3mm thick. Slicing them thinly prevents them from burning and gives a nice toasted garlic flavor.

Heat a little cooking oil in a pan over medium heat and sauté the sliced garlic until it’s golden brown and fragrant. Once the garlic is fragrant, add 50g of Baek Jong Won All-Purpose Mala Sauce and 50g of water. Stir well. Bring the sauce to a boil, then reduce the heat to low.

Remove the chicken drumettes from the oven once they are nicely browned on both sides.

The final step! Add the baked chicken drumettes to the prepared mala sauce in the pan. Toss to coat the drumettes evenly with the sauce. Add the sliced green onions and stir-fry for another minute until fragrant. Then, turn off the heat. Your delicious Mala Sauce Baked Chicken Drumettes are ready!
