Hello everyone! Today, I’m sharing a recipe for ‘Jeyuk Bokkeum,’ a dish my husband absolutely adores. It’s incredibly simple to make and tastes so delicious, making it a beloved staple in our home. Main Ingredients- 600g Pork Shoulder (or similar cut with good fat ratio for stir-frying)
- 1/2 Onion (thinly sliced)
- 1 stalk Green Onion (cut diagonally into large pieces)
- 1/4 Carrot (thinly julienned for color)
- 1 Korean Green Chili Pepper (seeds removed and minced, optional for extra spice)
- 1 Red Chili Pepper (minced, for color and mild heat)
Spicy & Sweet Sauce- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Soy Sauce (for savory depth)
- 1/2 Tbsp Sugar (adjust to your sweetness preference)
- 3 Tbsp Corn Syrup or Oligosaccharide (for gloss and sweetness)
- 1.5 Tbsp Minced Garlic
- 1 Tbsp Cooking Wine or Mirin (to remove pork odor)
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Soy Sauce (for savory depth)
- 1/2 Tbsp Sugar (adjust to your sweetness preference)
- 3 Tbsp Corn Syrup or Oligosaccharide (for gloss and sweetness)
- 1.5 Tbsp Minced Garlic
- 1 Tbsp Cooking Wine or Mirin (to remove pork odor)
Cooking Instructions
Step 1
First, gently pat the pork shoulder dry with paper towels to remove excess blood. This step helps reduce any gamey smell and allows the sauce to penetrate better.
Step 2
Cut the drained pork into bite-sized pieces, about 3-4 cm (1.5 inches). Slicing them too small might cause them to break apart during cooking, so aim for a manageable size.
Step 3
This is the crucial step for flavor! In a bowl, combine the gochujang, soy sauce, sugar, corn syrup, minced garlic, and cooking wine (or mirin). Whisk everything together until the sugar is dissolved and the sauce is well-mixed. Letting the sauce meld beforehand enhances the final taste.
Step 4
Heat about 1-2 tablespoons of cooking oil in a pan over medium-low heat. Add the diagonally sliced green onions and stir-fry until fragrant and lightly golden, creating aromatic green onion oil. This is the flavorful base for our Jeyuk Bokkeum.
Step 5
Add the pork pieces to the pan with the fragrant green onion oil. Increase the heat to medium-high and stir-fry until the outside of the pork is browned. Stir occasionally to prevent the pieces from sticking together.
Step 6
Once the pork is mostly browned, pour in all the prepared sauce. Increase the heat to high and stir-fry quickly for about 1-2 minutes, allowing the sauce to coat and adhere to the meat. Be careful not to let the sauce burn. Next, add the sliced onion, carrot, and chili peppers. Reduce the heat to medium-low and continue to stir-fry until the vegetables are tender and everything is well combined. Your delicious Jeyuk Bokkeum is ready to be served generously over a bowl of hot rice!
