Spicy & Sweet Konjac Noodle Rice Bowl: A Delicious Low-Calorie Diet Meal!
HACCP Certified Konjac Noodle Rice Bowl Recipe
This spicy and sweet konjac noodle rice bowl is a delicious and satisfying one-dish meal that doesn’t require any side dishes. I often make rice bowls with glass noodles because I love their chewy texture, but this time I tried using konjac noodles instead. Konjac noodles have a wonderfully chewy texture, just like glass noodles, and taste amazing! Konjac is a super low-calorie food, with only about 10 kcal per 100g, which is about 1/15th the calories of glass noodles, making it excellent for significantly reducing calorie intake. It also provides a feeling of fullness, making it perfect for a diet meal.
Main Ingredients
- Rice for 2 servings
- Konjac noodles 200g
- Frankfurter sausage 1 piece
- Onion 50g (approx. 1/4 onion)
- Carrot 50g (approx. 1/4 carrot)
- Perilla leaves (깻잎) about 10 leaves
- Cooking oil, a little
Seasoning Ingredients
- Minced garlic 0.5 Tbsp
- Water 1/2 cup (100ml)
- Oyster sauce 1 Tbsp
- Soy sauce 1 Tbsp
- Brown sugar 0.5 Tbsp
- Gochujang (Korean chili paste) 0.5 Tbsp
- Gochugaru (Korean chili flakes) 1 Tbsp
- Mirin (or cooking wine) 2 Tbsp
- Corn syrup (or rice syrup) 2 Tbsp
- Sesame oil 1 Tbsp
- Black pepper, a pinch
- Sesame seeds 1 Tbsp
- Minced garlic 0.5 Tbsp
- Water 1/2 cup (100ml)
- Oyster sauce 1 Tbsp
- Soy sauce 1 Tbsp
- Brown sugar 0.5 Tbsp
- Gochujang (Korean chili paste) 0.5 Tbsp
- Gochugaru (Korean chili flakes) 1 Tbsp
- Mirin (or cooking wine) 2 Tbsp
- Corn syrup (or rice syrup) 2 Tbsp
- Sesame oil 1 Tbsp
- Black pepper, a pinch

Cooking Instructions
Step 1
To start, prepare your fresh konjac noodles, preferably HACCP certified, and a delicious frankfurter sausage. Quality ingredients are the foundation of a great meal!
Step 2
Briefly blanch the frankfurter sausage in boiling water. This step helps to remove excess oil, resulting in a cleaner flavor. Once blanched, slice the sausage into rounds. Thinly slice the onion and carrot into thick strips. Finally, finely julienne the perilla leaves for a fresh, aromatic touch.
Step 3
Add about 0.5 Tbsp of vinegar to boiling water. This helps to remove any potential odor from the konjac noodles. Add the konjac noodles and blanch for just 10-20 seconds, then immediately drain. Overcooking can make them mushy. After draining, cut the konjac noodles into bite-sized pieces with scissors for easier eating.
Step 4
Heat a large pan over medium-high heat and add a little cooking oil. Sauté the minced garlic until fragrant. Then, add the thickly sliced onion and stir-fry until translucent. Add the carrots and cook for another minute. Finally, add the blanched konjac noodles and 1/2 cup of water, and stir-fry together.
Step 5
Now it’s time to add all the seasoning ingredients. Mix in 1 Tbsp oyster sauce, 1 Tbsp soy sauce, 0.5 Tbsp brown sugar, 0.5 Tbsp gochujang, and 1 Tbsp gochugaru. Stir well and cook for about 1 minute to allow the sauce to coat the konjac noodles evenly. Next, add the sliced frankfurter sausage and continue to stir-fry.
Step 6
Add 2 Tbsp mirin, 2 Tbsp corn syrup, 1 Tbsp sesame oil, and finally 1 Tbsp sesame seeds. Stir-fry until all the ingredients are evenly coated with the sauce and the liquid has mostly evaporated, creating a glossy finish. Stir-frying over medium heat prevents burning and ensures a delicious result.
Step 7
Just before turning off the heat, add the finely julienned perilla leaves and gently toss them in. The fresh aroma of the perilla leaves will enhance the overall flavor of the dish. Cooking them briefly on residual heat keeps their vibrant flavor intact.
Step 8
This is the finishing touch! Sprinkle with a pinch of black pepper and give it one last gentle stir while the heat is off. The residual heat will finish cooking the konjac noodles perfectly, completing your delicious konjac noodle stir-fry.
