Main Ingredients- 300g Pork Belly
- 1/2 Onion, thinly sliced
- 1 Green Onion, diagonally sliced
- 1/2 Tbsp Sesame Oil
- Pinch of Salt
- Pinch of Black Pepper
Special Seasoning Sauce- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 2 Tbsp Sugar
- 1/2 Tbsp Soy Sauce
- 1 Tbsp Fish Sauce (Anchovy or similar)
- 1.5 Tbsp Mirin (Rice Wine)
- 1/2 Tbsp Oyster Sauce
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Gochujang (Korean Chili Paste)
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 2 Tbsp Sugar
- 1/2 Tbsp Soy Sauce
- 1 Tbsp Fish Sauce (Anchovy or similar)
- 1.5 Tbsp Mirin (Rice Wine)
- 1/2 Tbsp Oyster Sauce
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Gochujang (Korean Chili Paste)
Cooking Instructions
Step 1
First, prepare your vegetables. Thinly slice the onion into strips and diagonally slice the green onion.
Step 2
In a bowl, combine all the ingredients for the special seasoning sauce. Add 1 Tbsp Gochugaru, 2 Tbsp Sugar, 1/2 Tbsp Soy Sauce, 1 Tbsp Fish Sauce, 1.5 Tbsp Mirin, 1/2 Tbsp Oyster Sauce, 1/2 Tbsp Minced Garlic, and 1 Tbsp Gochujang. Mix these ingredients thoroughly until well combined to create a delicious sauce.
Step 3
Heat a pan with a little cooking oil over high heat. Add the pork belly and sprinkle with salt and pepper. Cook until the pork belly is golden brown and nicely rendered. (Tip for checking pan heat: Place a piece of pork belly fat into the pan. If it immediately starts sizzling and rendering oil, your pan is perfectly preheated.)
Step 4
Once the pork belly is cooked to your liking, make a space in the center of the pan by pushing the meat to the sides. Gather the rendered pork fat into this cleared space. Now, add the prepared kimchi onto the hot fat and cut it into bite-sized pieces as it stir-fries. (Caution: Be mindful of splattering oil when cooking kimchi in hot pork fat, as the moisture from the kimchi can react with the hot fat.)
Step 5
When the kimchi is nicely stir-fried and tender, add the sliced onions and diagonally sliced green onions to the pan. Stir-fry everything together with the pork until well combined. Just before turning off the heat, drizzle with 1/2 Tbsp of sesame oil for an extra layer of nutty aroma. Your delicious Kimchi Pork Stir-fry is now ready to be served over a warm bowl of rice!
