Cooking Instructions
Step 1
First, prepare the enoki mushrooms. Trim off about 1-2 cm from the base of the enoki mushrooms and gently separate them into smaller clumps. This helps the sauce penetrate better and makes them easier to cook.

Now, let’s make the spicy and sweet sauce. In a small bowl, combine 0.5 Tbsp gochujang, 1 Tbsp soy sauce, 0.5 Tbsp minced garlic, 1 Tbsp oligodang, and the star ingredient, 1.5 Tbsp Songju Cold Noodle Sauce. Finally, add 1 tsp of sesame oil for a nutty aroma. Whisk everything together until well combined to create the sauce.

Next, prepare the pan for grilling. Heat a non-stick pan over medium-low heat and add a generous amount of cooking oil. Plenty of oil will help the enoki mushrooms cook to a nice golden brown without sticking.

Once the pan is hot, carefully arrange the prepared enoki mushrooms in a single layer. Avoid overcrowding the pan so they cook evenly.

Let the enoki mushrooms cook until one side is lightly golden brown, then flip them over to grill the other side. Cook until they are tender and slightly browned all over.

Once the enoki mushrooms are partially cooked, use a brush to evenly coat them with the prepared spicy and sweet sauce. Make sure to cover all sides so every bite is flavorful.

Flip the mushrooms again to let the sauce caramelize and coat them evenly. You can add a little more sauce if desired. Once both sides are nicely coated and slightly caramelized, finely chop the scallions and sprinkle them over the top for a fresh, aromatic finish. Serve immediately while warm for the best taste!
