Ingredients- 1 bunch fresh spinach
- 1 Tbsp gochujang (Korean chili paste)
- 0.5 Tbsp salt
- 0.5 Tbsp minced garlic
- 1.5 Tbsp chopped green onions
- 1 Tbsp plum extract (or corn syrup)
- 1.5 Tbsp sesame oil
- 1.5 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, trim the roots of the spinach bunch and wash it thoroughly. When boiling water, add 1 tablespoon of coarse salt to help retain the spinach’s vibrant green color and season it nicely.
Step 2
Add the prepared spinach to the boiling water and blanch it very briefly, just enough for it to wilt slightly. Aim for around 25 to 30 seconds; overcooking will make the texture mushy.
Step 3
Immediately drain the blanched spinach by pouring it into a colander. To maintain its crisp texture, quickly rinse it under cold running water and drain well. This step helps preserve the fresh crunch.
Step 4
Squeeze out as much water as possible from the spinach. Then, add all the seasoning ingredients. (Using a standard tablespoon as a guide): 1 Tbsp gochujang, 0.5 Tbsp minced garlic, 1.5 Tbsp chopped green onions, 1 Tbsp plum extract (or 1 Tbsp corn syrup), 1.5 Tbsp sesame oil, and 1.5 Tbsp toasted sesame seeds. Gently mix and toss the spinach to ensure the seasoning is evenly distributed.
Step 5
Your incredibly simple and delicious Gochujang Spinach Salad is ready! It’s the perfect side dish that will make your rice disappear in no time.
