  • Ingredient Category : Pork
  • Occasion : Entertaining / Guests
  • Cooking : Stir-fry
  • Servings : 3 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Beginner

Main Ingredients

  • Pork shoulder or front leg 600g (cut into bite-sized pieces)
  • Onion 1/2 (thinly sliced or roughly chopped)
  • Green onion 1 stalk (cut diagonally)
  • Korean green chili pepper 2 (finely chopped)

Seasoning Sauce

  • Gochujang (Korean chili paste) 3 Tbsp
  • Gochugaru (Korean chili flakes) 1 Tbsp
  • Soy sauce 1/2 Tbsp
  • Minced garlic equivalent to 4 cloves (approx. 1 Tbsp)
  • Maesilcheong (plum syrup) or sugar 1 Tbsp (adjust sweetness to taste)
  • Toasted sesame seeds 1 tsp
  • Black pepper a pinch

Cooking Instructions

Step 1

First, thoroughly wash and prepare all the ingredients for the Jeyuk Bokkeum. Slice the vegetables into desired sizes and trim the pork.

Step 1

Step 2

In a mixing bowl, combine all the seasoning sauce ingredients. Finely mince the garlic before adding it. Then, add gochujang, gochugaru, soy sauce, maesilcheong (or sugar), toasted sesame seeds, and black pepper. Mix well until there are no lumps, creating a smooth sauce. Making the sauce in advance allows the flavors to meld beautifully.

Step 2

Step 3

Slice the onion thinly or chop it roughly. Cut the green onion diagonally into about 1cm thick pieces. Finely chop the Korean green chili peppers to add a spicy kick – you can adjust the amount based on your spice preference.

Step 3

Step 4

Cut the pork shoulder or front leg into substantial, bite-sized pieces, approximately 3-4cm. Pork shrinks as it cooks, so cutting it too small can diminish the texture. Larger pieces retain a better bite.

Step 4

Step 5

Place the cut pork into the bowl with the prepared seasoning sauce. Use your hands to gently massage and mix the sauce into the pork, ensuring every piece is evenly coated. Make sure to mix thoroughly for even flavoring.

Step 5

Step 6

To tenderize the pork and remove any gamey odors, pour in about 1 shot (approx. 30ml) of soju and mix well again. This step is optional but highly recommended for enhanced flavor and texture.

Step 6

Step 7

Cover the marinated pork with plastic wrap and refrigerate for at least 30 minutes. If you have time, letting it marinate for an hour or longer will allow the flavors to penetrate the meat more deeply, resulting in an even more delicious Jeyuk Bokkeum. If you are short on time, you can skip this marinating step.

Step 7

Step 8

Heat 2 Tbsp of cooking oil in a pan over medium-high heat. Add the sliced green onions and stir-fry for about 5 minutes until fragrant, infusing the oil with onion essence. This ‘scallion oil’ adds a wonderful aroma that complements the pork.

Step 8

Step 9

Once the scallion oil is fragrant, add the marinated pork to the pan. Stir-fry over high heat, breaking up any clumps with chopsticks or a spatula, until the pork is cooked through and changes color.

Step 9

Step 10

When the pork is almost cooked, add the prepared onion and Korean green chili peppers. Stir-fry together for about 3 minutes, just until the vegetables are slightly tender but still retain a pleasant crispness. Overcooking will make the vegetables mushy.

Step 10

Step 11

Finally, sprinkle toasted sesame seeds over the stir-fry before turning off the heat. Your delicious Gochujang Jeyuk Bokkeum is ready! Serve it over hot rice or enjoy it with fresh lettuce wraps.
