How to Make Delicious and Simple Gochujang Pork Bulgogi at Home
Introducing a delicious Gochujang Pork Bulgogi recipe that you can quickly make with the vegetables you have on hand when you’re short on side dishes. Using 600g of affordable pork shoulder, this recipe is generous enough for a family of three, and it’s also perfect as a side for drinks. We’ve made it not too spicy so even children can enjoy it. This recipe is based on 600g (approximately 1.3 lbs) of pork.
Main Ingredients
- Pork shoulder 600g
- 1 stalk Green onion
- 1/2 King oyster mushroom
- 1/2 Onion
- 1.5 Tbsp Minced garlic
- 1/3 Carrot
- 2 Cheongyang peppers (Korean chili peppers)
Seasoning Ingredients
- 2 Tbsp Sugar
- 2 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Soy sauce
- 2 Tbsp Mirin (or cooking wine)
- 2 Tbsp Gochugaru (Korean chili powder)
- Pinch of Black pepper powder

Cooking Instructions
Step 1
First, prepare the pork and the accompanying vegetables. Slice the onion, carrot, king oyster mushroom, green onion, and cheongyang peppers into large, bite-sized pieces. Preparing them in advance makes the cooking process much smoother.
Step 2
Let’s make the delicious bulgogi sauce! In a bowl, combine the gochujang, soy sauce, mirin, gochugaru, minced garlic, and the sliced cheongyang peppers. Mix them well. (Tip: Adding cheongyang peppers enhances the spicy flavor, making it even more delicious.)
Step 3
Place the pork in a large bowl and first mix it with 2 tablespoons of sugar. Sugar helps to tenderize the meat and allows the marinade to penetrate better. Then, add all the prepared sauce to the pork and mix thoroughly, ensuring the marinade coats every piece. Let it marinate for at least 20 minutes to allow the flavors to meld.
Step 4
Lightly oil a heated pan, then add the marinated pork. Stir-fry over high heat to sear the meat and lock in its juices.
Step 5
When the pork is about 2/3 cooked, add the sliced onion and carrot. Continue to stir-fry together. The vegetables will release moisture, which will blend with the pork and enhance the flavor.
Step 6
Finally, add the king oyster mushrooms and green onions, and stir-fry quickly. The vegetables taste best when they retain a slight crispness. Once the pork is fully cooked, turn off the heat and sprinkle with sesame seeds if desired. (Tip: To prevent the vegetables from becoming too soft and mushy, stir-fry them quickly over high heat.)
Step 7
