The Best Flavor! Homemade Spicy & Sweet Gochujang Pork Bulgogi (Jeyuk Bokkeum)
Tonight, we’re whipping up a delicious spicy and sweet Gochujang Pork Bulgogi, made with pork that was marinated overnight! Instead of relying on store-bought sauces, we’re elevating the flavor with a homemade marinade that’s guaranteed to be a rice-lover’s dream. I bought a generous 4 ‘geun’ (about 2.4 kg) of pork to marinate, allowing us to enjoy a quick and impressive meal even on busy mornings. Although the pork was slightly frozen when I took it out of the freezer, it thawed perfectly during the preparation process, leading to a flawless dish. Bringing this recipe to life required considerable time and effort, but I’ve poured my heart into it to deliver the best taste for you. I can hardly remember how I used to publish one post per hour back then, but I’m channeling that youthful passion to write this detailed guide for you. Why not try making this irresistible pork bulgogi at home with this recipe and enjoy a restaurant-quality taste?
Main Ingredients- Pork (for Bulgogi) 501g
- 1/2 Onion
- 1 stalk Green Onion
Cooking Instructions
Step 1
Prepare 501g of pork. First, let’s marinate the meat. In a bowl, combine the pork with 1 Tbsp sugar, 2 Tbsp mirin, 0.5 Tbsp minced garlic, and a pinch of black pepper. Mix well by massaging the ingredients into the meat. If the pork is frozen, setting it aside for a moment while you prepare other ingredients will allow it to thaw naturally, making it easier to cook.
Step 2
Now, let’s make the delicious Jeyuk Bokkeum sauce. In a separate bowl, combine 2 Tbsp Gochujang, 2 Tbsp Gochugaru, 2 Tbsp soy sauce, 2 Tbsp mirin, 2 Tbsp sesame oil, 1 Tbsp plum extract, and 1 Tbsp minced garlic. Whisk everything together until well combined. This sauce alone will bring out the wonderful flavor of your Jeyuk Bokkeum.
Step 3
Next, prepare the vegetables. Slice 1 green onion diagonally and thinly slice half an onion. The crispiness of the vegetables will beautifully complement the tender pork.
Step 4
It’s time to combine all the ingredients. Pour the prepared sauce over the marinated pork in the bowl. Add the sliced onion and green onion. Gently mix everything with your hands, ensuring the sauce evenly coats the meat and vegetables. For an even deeper flavor, cover the bowl and refrigerate for at least an hour, or preferably overnight.
Step 5
Take the pork out of the refrigerator after its overnight marination and get ready to stir-fry. Heat a pan over medium-high heat with a splash of oil. Add the marinated pork and stir-fry quickly.
Step 6
Since pork shoulder can sometimes be a bit dry, add a generous amount of cooking oil to the pan when stir-frying. Once the pork is partially cooked, add an additional 1 Tbsp of sesame oil for extra aroma and flavor. Stir-fry the pork, making sure not to burn it, until it’s cooked through and fragrant.
Step 7
Finally, sprinkle some sesame seeds over the finished Gochujang Pork Bulgogi to complete this delicious Jeyuk Bokkeum. Enjoy it with a bowl of hot rice!
