Introducing a savory and slightly sweet Gochujang Braised Potato dish, perfect for when you’re craving something delicious and a little different. This recipe uses simple ingredients and is easy enough for beginners to make a fantastic side dish that pairs wonderfully with steamed rice. The balanced flavors of spicy gochujang, savory soy sauce, and a hint of sweetness make it an irresistible pantry staple.
Main Ingredients- 3 medium potatoes
- 262g Korean green chili peppers (or 2-3 Korean red chili peppers for extra spice, adjust to taste)
- 1 medium onion
Braising Sauce- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Soy Sauce (preferably Jin Ganjang)
- 1 Tbsp Plum Extract (Maesil Cheong) or syrup
- 1/2 Tbsp Sugar (or corn syrup)
- 1 tsp Minced Garlic
- 1/2 cup Water (approx. 100ml)
- A pinch of Toasted Sesame Seeds (for garnish)
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Soy Sauce (preferably Jin Ganjang)
- 1 Tbsp Plum Extract (Maesil Cheong) or syrup
- 1/2 Tbsp Sugar (or corn syrup)
- 1 tsp Minced Garlic
- 1/2 cup Water (approx. 100ml)
- A pinch of Toasted Sesame Seeds (for garnish)
Cooking Instructions
Step 1
Let’s begin the first step to making delicious Gochujang Braised Potatoes.
Step 2
Thoroughly wash and peel the 3 medium potatoes. Cut them into bite-sized pieces, about 2cm thick. Soaking the cut potatoes in cold water for a while will help remove excess starch, allowing the sauce to adhere better and preventing them from breaking apart during cooking.
Step 3
Coarsely slice the medium onion. Wash the 262g of Korean green chili peppers and remove their stems. If you enjoy a spicier flavor, feel free to finely chop 2-3 Korean red chili peppers and add them.
Step 4
In a bowl, combine 1 Tbsp Gochujang, 1 Tbsp Soy Sauce, 1 Tbsp Plum Extract, 1/2 Tbsp Sugar, and 1 tsp Minced Garlic. Mix well to create the braising sauce. Add 1/2 cup of water to achieve the desired consistency.
Step 5
Place the sliced potatoes and onions in a deep pan or pot. Pour the prepared braising sauce evenly over them.
Step 6
Cover the pan and braise over medium-low heat for about 10-15 minutes, or until the potatoes are tender. To prevent the sauce from burning, gently shake the pan or stir occasionally.
Step 7
Once the potatoes are partially cooked, add the Korean green chili peppers. Continue to braise uncovered for another 2-3 minutes, allowing the peppers to soften slightly and the flavors to meld. Be careful not to overcook the peppers, as they might lose their crisp texture.
Step 8
Finally, sprinkle with a pinch of toasted sesame seeds for garnish. Your delicious Gochujang Braised Potatoes are ready to be enjoyed! Serve hot with steamed rice.
