Spicy & Sweet Gochujang Anchovy Stir-fry: Perfect Rice Thief & Drinking Snack!
This versatile side dish, ‘Gochujang Anchovy Stir-fry,’ is a pantry staple that you’ll want to make in a generous batch. It’s delicious with a bowl of hot rice, fantastic even with plain rice, and serves as a satisfying snack when you need something to go with your drinks. While it’s important to cook for the kids, don’t forget to show some love to your husband’s taste buds with this magical dish!
Main Ingredients- 1 bowl of medium-sized dried anchovies (gut and head removed, if desired)
Seasoning- 50ml Gochujang (Korean chili paste, approx. 3.5 Tbsp)
- 60ml Corn syrup or rice syrup, approx. 4 Tbsp)
- 1 Tbsp fine Gochugaru (Korean chili powder)
- 1 Tbsp coarse Gochugaru (Korean chili powder)
- 1 Tbsp sesame oil
- 1 Tbsp mayonnaise
- 1 Tbsp minced garlic
- 1 Tbsp oyster sauce
- 50ml Gochujang (Korean chili paste, approx. 3.5 Tbsp)
- 60ml Corn syrup or rice syrup, approx. 4 Tbsp)
- 1 Tbsp fine Gochugaru (Korean chili powder)
- 1 Tbsp coarse Gochugaru (Korean chili powder)
- 1 Tbsp sesame oil
- 1 Tbsp mayonnaise
- 1 Tbsp minced garlic
- 1 Tbsp oyster sauce
Cooking Instructions
Step 1
First, heat a dry pan over medium-low heat. Add the medium-sized anchovies and stir-fry gently, being careful not to burn them. This step removes any fishy smell and enhances their nutty flavor.
Step 2
Once the anchovies start to become crispy, create a space in the center of the pan and add 1 Tbsp of cooking oil. Add the fine and coarse gochugaru, minced garlic, gochujang, corn syrup, oyster sauce, and sesame oil to this space.
Step 3
Reduce the heat to low and quickly mix all the seasoning ingredients together, ensuring they don’t burn. Once the seasoning mixture starts to sizzle, add the stir-fried anchovies and toss to coat them evenly.
Step 4
Continue to stir and cook over low heat until the anchovies and seasoning are well combined. For a glossier finish, you can add another 1/2 Tbsp of corn syrup and let it simmer a bit longer. Be careful not to overcook the anchovies, which could make them too hard.
Step 5
Finally, transfer the finished spicy and sweet anchovy stir-fry to a serving dish. Sprinkle generously with sesame seeds for a beautiful presentation. Once cooled completely, store in an airtight container in the refrigerator for up to 2 weeks.
