Main Ingredients- Garlic scapes 200g (approx. 1 bunch)
- Dried shrimp 2 handfuls (approx. 60g)
- Vegetable oil 1 Tbsp
- Salt, a pinch
- Minced garlic 1/2 Tbsp
- Sesame seeds, a little
Sauce Ingredients- Soy sauce 5 Tbsp
- Gochujang (Korean chili paste) 1 Tbsp
- Gochugaru (Korean chili flakes) 2 Tbsp
- Cooking wine (Mirin) 2 Tbsp
- Oligosaccharide (or corn syrup) 2.5-3 Tbsp
- Water 10 Tbsp
- Sesame oil 1 Tbsp
- Soy sauce 5 Tbsp
- Gochujang (Korean chili paste) 1 Tbsp
- Gochugaru (Korean chili flakes) 2 Tbsp
- Cooking wine (Mirin) 2 Tbsp
- Oligosaccharide (or corn syrup) 2.5-3 Tbsp
- Water 10 Tbsp
- Sesame oil 1 Tbsp
Cooking Instructions
Step 1
1. For the garlic scapes, I purchased one bunch, which typically weighs around 200g, from the supermarket. Trim any tough ends from the garlic scapes and then cut them into pieces about 3cm (1.2 inches) long. Wash them thoroughly and set aside, ensuring excess water is drained.
Step 2
2. For the dried shrimp, I used what’s sold as ‘deokjeol saeu’ (shrimp with heads and legs removed). Prepare about two handfuls.

3. In a pot, add enough water to generously cover the prepared garlic scapes. Add a pinch of salt. Once the water comes to a rolling boil, carefully add the garlic scapes. Blanch them very briefly – just for about 15-20 seconds, like a quick dip. Immediately transfer them to cold water to shock them and preserve their crisp texture. Drain them well in a colander.
Step 4
4. Now, it’s time to stir-fry. In a wide frying pan, add the blanched garlic scapes and the prepared dried shrimp. Add 1 Tbsp of vegetable oil, 1/2 Tbsp of minced garlic, and a tiny pinch of salt (about the size of a pea). Stir-fry over medium heat for about 2-3 minutes until the garlic scapes soften slightly and the shrimp become fragrant.
