  • 20cm green onion (scallion)
  • Rice water, as needed

Sauce Ingredients

  • 1 Tbsp red pepper powder (gochugaru)
  • 1 Tbsp red pepper paste (gochujang)
  • 1 Tbsp soy sauce
  • 1 Tbsp corn syrup
  • 1/2 Tbsp sugar
  • 2 Tbsp cooking wine (mirin, etc.)
  • 1 Tbsp minced garlic
  • Pinch of black pepper
  • 1 Tbsp sesame oil

To remove any fishy odor and reduce saltiness, soak the mackerel in rice water for about 20 minutes. If you don’t have rice water, you can use plain water mixed with a little salt.

Wash the green onion and slice it thinly into about 20cm lengths. You can use a mix of the white and green parts.

In a large bowl, combine 1 Tbsp gochugaru, 1 Tbsp gochujang, 1 Tbsp soy sauce, 1 Tbsp corn syrup, 1/2 Tbsp sugar, 2 Tbsp cooking wine, 1 Tbsp minced garlic, a pinch of black pepper, and 1 Tbsp sesame oil. Mix well until smooth to create a delicious marinade.

Heat 1-2 Tbsp of cooking oil in a pan over medium-low heat. Add the sliced green onions and sauté until fragrant, creating a scallion-infused oil. Be careful not to burn the green onions.
