For the Rice Bowl- 150g cooked rice
- 200g boneless chicken thigh meat
- 1/2 onion
- A little chopped green onion (for garnish)
Spicy Fire Chicken Sauce- 1 tsp soy sauce
- 2 cloves garlic, minced
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sugar
- 1 Tbsp mirin (rice wine)
- A pinch of black pepper
Creamy Egg Sauce- 1.5 Tbsp soy sauce
- 1 Tbsp mirin (rice wine)
- 1 tsp sugar
- 1 Tbsp water
- 2 eggs
- 1 tsp soy sauce
- 2 cloves garlic, minced
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sugar
- 1 Tbsp mirin (rice wine)
- A pinch of black pepper
Creamy Egg Sauce- 1.5 Tbsp soy sauce
- 1 Tbsp mirin (rice wine)
- 1 tsp sugar
- 1 Tbsp water
- 2 eggs
Cooking Instructions
Step 1
First, prepare your vegetables and chicken. Slice the onion as thinly as possible. Mince the garlic finely using a knife. Cut the chicken into bite-sized pieces. (Tip: Using chicken thigh meat will result in a more tender and juicy dish!) In a bowl, combine all the ingredients for the Fire Chicken Sauce and mix well.
Step 2
Heat a little oil in a pan over medium-high heat. Add the chicken pieces and sear them until they are golden brown on the outside. Ensure all sides are browned, cooking the chicken about 50% through at this stage.
Step 3
Pour the prepared Fire Chicken Sauce over the chicken. Continue to cook, stirring and allowing the sauce to reduce and thicken, coating the chicken nicely. Cook over medium-low heat until the sauce is well-absorbed and glossy.

(Tip: If you prefer a milder flavor, you can omit the gochujang and gochugaru to create a delicious soy-based chicken topping for your rice bowl.)

In a separate pan, or after cleaning the first pan, add the thinly sliced onions and sauté them until they become translucent. This will bring out the natural sweetness of the onions, enhancing the overall flavor of the dish.

Add the glazed chicken and onions mixture to the pan. Stir gently to combine everything well.

In a small bowl, whisk together the ingredients for the Creamy Egg Sauce (soy sauce, mirin, sugar, water). Pour this mixture into the pan. As the eggs begin to set, gently stir them to create soft, creamy scrambled eggs.

The key here is to not overcook the eggs. You want them to remain soft and creamy, like a luscious scrambled egg, rather than fully cooked and firm. This texture provides a wonderful contrast to the spicy chicken.
