This is the Euljiro-style whelk salad with somen noodles, made by adding shredded dried pollack (also known as ‘jinmichae’) and fresh scallions to canned whelks. The seasoning relies on the whelk’s own broth and fermented fish sauce for saltiness, using only chili powder and no gochujang (red chili paste). This is considered the classic way to make Euljiro whelk salad. Including scallions and dried pollack is also characteristic of the Euljiro style. Served with boiled somen noodles, you mix everything together to eat. It makes a fantastic appetizer or snack, especially perfect with a cold beer!

  • Boiled somen noodles 1 serving

First, cut the dried pollack into bite-sized pieces, about 2-3 segments long. Also, prepare the julienned scallions so they are not too long. Pre-cutting the ingredients like this will make mixing easier later.

Prepare two cans of whelks. Use all the contents (including the broth) from one can. For the second can, drain the broth and use only the whelks. If the whelks are large, cut them into 2-3 pieces each.

In a large bowl, combine the prepared dried pollack, scallions, and the whelks. Add 5 Tbsp of chili powder, 2 Tbsp of rice syrup, 1 Tbsp of fermented anchovy sauce, 2 Tbsp of sesame oil, and finally 1 Tbsp of toasted sesame seeds.

Once all the seasoning ingredients are added, gently mix everything together with your hands. Ensure the seasoning is evenly distributed throughout all the ingredients. Be careful not to mix too vigorously, as this could break apart the whelks or scallions.
