  • 1 pack stir-fry chicken (approx. 1kg)
  • 1 potato (cut into large chunks)
  • 1/2 onion (cut into large chunks)
  • 1 stalk green onion (cut into large chunks)
  • 2 cups water (400ml)

Let’s prepare the vegetables that are key to the flavor of Dakbokkeumtang! Peel the potatoes and onion, then cut them into large chunks. Cutting them large ensures they retain their texture and don’t become mushy when simmered with the chicken. Cut the green onion diagonally into large pieces as well.

Preparing the fresh chicken! Rinse the stir-fry chicken lightly under cold running water to clean it. Nowadays, fresh chicken often doesn’t have a strong gamey smell that requires soaking in milk or rice water. If you are sensitive to the chicken smell, you can parboil it briefly in boiling water.

The start of flavor: cooking! Place the large-cut potatoes and onion at the bottom of the pot, then add the prepared chicken. Pour in 2 tablespoons of the pre-made all-purpose sauce and 2 cups (400ml) of fresh water. Now, bring it to a boil over high heat to let all the ingredients meld together.

The golden ratio for all-purpose sauce! You can easily make it with ingredients you have at home. Mix 3 tablespoons of gochujang, 1-2 tablespoons of gochugaru (adjust spice level to your preference), 1 tablespoon of soy sauce, 1 tablespoon of corn syrup (adjust sweetness), and 0.5 tablespoon of minced garlic (or 1 teaspoon). Once made, this sauce can be used not only for Dakbokkeumtang but also for various stir-fry dishes. Adjusting the seasoning with more syrup or chili flakes makes cooking even easier!

Simmer gently for deep flavor! Once it starts boiling over high heat, reduce to medium heat, cover with a lid, and let it simmer gently until the ingredients are tender and cooked through. After simmering for about 20-25 minutes, add the large-cut green onions and simmer for a little longer. The amount of green onion can be adjusted to your liking, or you can chop it smaller. Feel free to add other vegetables you enjoy as well!
