Wondering what to cook for your husband after he gets off work? I decided to make Dakbokkeumtang! Mashing the potatoes and mixing them with the rich Dakbokkeumtang sauce is simply divine! This dish is a guaranteed hit for any meal.
Main Ingredients- Chicken pieces 750g
- Sweet potatoes 3 medium
- Scallions 2 stalks
- Chicken broth or water 700ml
Spicy & Sweet Seasoning- Gochujang (Korean chili paste) 2 Tbsp
- Gochugaru (Korean chili flakes) 7 Tbsp
- Minced garlic 1 heaping Tbsp
- Soy sauce 6 Tbsp
- Cooking wine (Mirin) 1 Tbsp
- Black pepper, a few dashes
- Sugar 2 Tbsp
- Corn syrup or Oligosaccharide 1 Tbsp
- Soju or Rice wine 1 cup (approx. 180ml)
- Toasted sesame seeds for garnish
- Gochujang (Korean chili paste) 2 Tbsp
- Gochugaru (Korean chili flakes) 7 Tbsp
- Minced garlic 1 heaping Tbsp
- Soy sauce 6 Tbsp
- Cooking wine (Mirin) 1 Tbsp
- Black pepper, a few dashes
- Sugar 2 Tbsp
- Corn syrup or Oligosaccharide 1 Tbsp
- Soju or Rice wine 1 cup (approx. 180ml)
- Toasted sesame seeds for garnish
Cooking Instructions
Step 1
Before you begin cooking, prepare all your ingredients by chopping them into bite-sized pieces. This includes the sweet potatoes and scallions. Having everything prepped will make the cooking process much smoother.
Step 2
Rinse the chicken pieces thoroughly under cold running water. Carefully trim away any remaining small bones or excess fat to ensure a cleaner taste and texture.
Step 3
Bring a pot of water to a boil and add the chicken pieces. Blanch them for about 2-3 minutes. Adding 1 tablespoon of sugar and 1 tablespoon of cooking wine to the boiling water during this step can help to remove any gamey odor from the chicken.
Step 4
As the chicken blanches, skim off any impurities or foam that rise to the surface. Once the chicken pieces turn slightly opaque, transfer them to a bowl of cold water and rinse them clean. This step helps to further clean the chicken.
Step 5
Drain the blanched chicken pieces thoroughly in a colander. This ensures excess water is removed before moving to the next step.
Step 6
In your main cooking pot, pour in 700ml of chicken broth or water and bring it to a boil over medium-high heat. The amount of liquid should be enough to mostly cover the chicken. Adding about 2 tablespoons of sugar at this initial boiling stage can help the chicken absorb flavors better later on.
Step 7
If using chicken broth, you can dissolve two bouillon cubes in 600ml of water (based on 1 cube per 300ml) or use homemade broth for a richer flavor. If you don’t have broth, simply using water is perfectly fine.
Step 8
Now, let’s make the flavorful seasoning sauce. In a large bowl, combine gochujang, gochugaru, minced garlic, soy sauce, cooking wine, black pepper, sugar, corn syrup, and soju (or rice wine). Whisk everything together until well combined to create your delicious sauce.
Step 9
Once the broth (or water) is boiling, add all of the prepared seasoning sauce and stir to dissolve it into the liquid. At this point, I also added the pre-chopped sweet potatoes and scallions. Adding all ingredients together can shorten the cooking time and help the flavors meld beautifully.
Step 10
As the chicken and vegetables start to cook, feel free to add an extra tablespoon of gochugaru if you prefer a spicier kick and deeper color. Reduce the heat to medium-low and let it simmer until the sweet potatoes are tender. Once the sauce has reduced to your desired consistency, turn off the heat and sprinkle with toasted sesame seeds for a beautiful finish. Your Dakbokkeumtang is ready!
Step 11
Adjust the sauce consistency to your liking. If you prefer a more ‘saucy’ stew, use around 500ml of water or just enough to mostly cover the chicken. I used a bit more liquid because I enjoy having plenty of sauce for mixing with rice or even making fried rice later! Feel free to adjust the liquid amount to achieve your preferred consistency.
Step 12
Your delicious spicy and sweet Dakbokkeumtang is complete! Enjoy it with a hot bowl of rice.
