Main Ingredients

  • 1 whole squid (body, approx. 200-250g)
  • 1/2 onion
  • 1/3 carrot
  • 1 stalk green onion
  • 10 Korean green chili peppers (kkwarigochu)
  • 1 red chili pepper
  • 2 Tbsp cooking oil
  • 1 Tbsp sesame oil
  • Pinch of sesame seeds
  • Pinch of black pepper

Squid Marinade

  • 2 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp soy sauce
  • 0.5 Tbsp oyster sauce
  • 1 Tbsp minced garlic
  • 1 Tbsp brown sugar
  • 1 Tbsp mirin (or cooking wine)
  • 1 Tbsp plum extract
  • 1 Tbsp oligosaccharide

Cooking Instructions

Step 1

Before you start cooking, thoroughly wash and prepare all your ingredients. For the squid, remove the innards and cartilage, then peel off the skin and clean it.

Slice the onion and carrot into 0.5cm thick strips. Finely chop the green onion. Remove the stems from the Korean green chili peppers and red chili peppers, then slice them diagonally at about 1cm intervals for easy eating.

On the inside of the cleaned squid body, make diagonal, crisscross scores. This helps the marinade penetrate better and makes the texture more tender when cooked. Cut the scored squid into bite-sized pieces, about 2-3cm long.

Place the cut squid in a bowl. Add all the ‘Squid Marinade’ ingredients listed: gochujang, gochugaru, soy sauce, oyster sauce, minced garlic, brown sugar, mirin, plum extract, and oligosaccharide.

Gently mix everything with your hands until the marinade is evenly coated on the squid. Let it marinate for about 10 minutes; this allows the flavors to meld beautifully into the squid, resulting in a more delicious Squid Bossam.

Heat 2 Tbsp of cooking oil in a pan over medium-low heat. Add the chopped green onion and stir-fry for about 1 minute until fragrant, creating infused oil. Then, add the sliced onion and carrot and stir-fry for 1-2 minutes until they begin to soften slightly. Once the vegetables are partially cooked, add the marinated squid to the pan.

Increase the heat to high and stir-fry the squid quickly. In about 3 minutes, the squid will turn a distinct white color and start to become plump. Be careful not to overcook, as it can become tough.

When the squid is almost fully cooked and white, add the sliced Korean green chili peppers and red chili peppers. Stir-fry together for another minute until the peppers are slightly wilted. Turn off the heat, then stir in 1 Tbsp of sesame oil and a pinch of sesame seeds for a rich, nutty aroma.

Finally, with the heat off, sprinkle a little black pepper. Your spicy, sweet, and chewy Squid Bossam stir-fry is now complete! It’s perfect as a side dish for rice or as a delicious snack.
